RUM SOAKED GRILLED PINEAPPLE #RECIPE @VMBurns

 VMBURNS: It's July and for weeks on, but the burgers needed to have cooked longer. July 4th I made Chili Lime Chicken Tacos and Grilled Pineapple Salsa. YUM! A friend gave me a tip and suggested I buy a grill mat. OMG! That was a life changer. I got the lovely grill marks, and cleanup was a breeze! Anyway, on July 6th I found a recipe on Cheff Recipe for Cilantro Lime Chicken and it was delish. Don't have a grill? You can fry, bake, or air fry. However, I highly recommend the grill if you have one. I forgot the cilantro in the first photo.



RUM SOAKED GRILLED PINEAPPLE 

 
INGREDIENTS 
  • 1 Pineapple
  • 1/2 Cup rum
  • 1/2 Cup Brown sugar
  • 1 Teaspoon ground cinnamon
  • 1 Teaspoon Vanilla 

  • INSTRUCTIONS

    1. Combine the rum, brown sugar, cinnamon, and vanilla in a bowl.
    2. Slice the pineapple into rings and remove the core. (FYI - I used my apple corer)
    3. Place the pineapple rings into a baking dish and then pour the rum mixture over the pineapples. Toss to make sure the pineapple is coated well, then place in the fridge. 
    4. Pour the liquid into a saucepan and heat.
    5. Grill the pineapple rings for approximately 2 minutes. I use a grill mat for easy cleanup but if you don't, you will probably need to use a little cooking spray to keep the pineapples from sticking.
    6. Flip the rings and grill for 1-2 minutes.
    7. Place the grilled pineapples in a bowl and add a scoop of vanilla ice cream and drizzle with the warm rum sauce.

  2. These sound so delicious. And I'm going to have to get me a grill mat! I think the weirdest thing I've grilled is peaches.

  3. Sounds good, but I'm finding the directions confusing,
    "...pour the rum mixture over the pineapples. Toss to make sure the pineapple is coated well, then place in the fridge. Pour the liquid into a saucepan and heat."
    If everything is in the fridge (for how long?), how do I have liquid to put in a pan?
    I'm with my namesakes, Libby. This sounds like it would be great done to peaches.

    1. Libby, you use the rum mixture to marinate the pineapples. I left it in the fridge for a couple of hours, but you can do 10 minutes to 4 hours. This is so the pineapples soak in the flavor. Then, I put it in a pan to heat the sauce AFTER I took it out of the oven. I'll bet the peaches would be awesome, too.

  4. I love grilled pineapple, but I have never tried it with rum. Actually, I love pineapple any way it is used.
