Cilantro Lime Grilled Chicken #recipe @vmburns

 VMBURNS: It's July and for weeks I've seen a ton of commercials and advertisements for grills for the 4th of July. I have wanted a grill for years, but never bought one. In all transparency, I'm just the tiniest bit scared of grills. However, I finally decided to conquer my fear and buy a grill. It's a beauty. I got a gas grill and bought my first propane tank. Boy was that scary. Thank goodness for YouTube. I must have watched ten videos. Eventually, I got brave and fired her up (yes, I think my grill is a she. She doesn't have a name yet, but she may by the end of the season). July 3rd I tested her out with hamburgers. I got over the fear of turning the grill on, but the burgers needed to have cooked longer. July 4th I made Chili Lime Chicken Tacos and Grilled Pineapple Salsa. YUM! A friend gave me a tip and suggested I buy a grill mat. OMG! That was a life changer. I got the lovely grill marks, and cleanup was a breeze! Anyway, on July 6th I found a recipe on Cheff Recipe for Cilantro Lime Chicken and it was delish. Don't have a grill? You can fry, bake, or air fry. However, I highly recommend the grill if you have one. I forgot the cilantro in the first photo.



CILANTRO LIME GRILLED CHICKEN



 
INGREDIENTS
  •  
  • 1 pound boneless, skinless  chicken thighs
  • 1/4 Cup Olive Oil
  • 2 limes, juice and zest
  • 4 Garlic cloves, minced
  • 1 Tablespoon Honey 
  • 1 Tablespoon Chili Powder 
  • 1 Teaspoon Ground Cumin
  • 1 Teaspoon Crushed Red Pepper Flakes
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Smoked Paprika
  • 1/2 Teaspoon Black Pepper
  • 3 Tablespoons Cilantro, chopped


  • INSTRUCTIONS

    1. Combine all of the marinade ingredients in a Ziploc bag.
    2. Remove 3 Tablespoons of the marinade and set aside for later.
    3. Add the chicken. Coat each piece of chicken and place in the fridge for 2 hours.

    4. Preheat the grill to medium-high heat.

    5. Remove the chicken from the marinade and grill for 6 minutes per side or until the internal temperature reaches 165 degrees.

    6. Let the chicken rest for 5 minutes before serving.
    7. Brush the chicken with the reserved marinade.

    Hubby does our grilling, but he always tells me to go slow and take your time. It's easier to zap it a bit if underdone after getting the grilled flavor than to undo it if it's under done.

  5. Your chicken looks delicious, Valerie. Great flavor combo and the grilling takes it over the top. Congrats on your new grill, too. We use a Weber charcoal grill, which is a different animal than a gas grill, but I know one trick people do use for a gas grill is a "wood chip box" to create smoke flavor. Your grill may have a wood chip drawer or box already included, or you can buy one and use mesquite or other wood chips to impart even more flavor. Tutorials on YouTube will tell you more. In the meantime, thanks for sharing your recipe and experience, and enjoy your summer grilling!

  6. Oh, my does this look GOOD! Nothing like cilantro and lime. My tip is this: Since grilling is a bit of a pain, but the resulting food is so very delicious, always make more than you know you'll want that day, as then you'll have leftovers!

  8. Back up a bit. Grilled Pineapple salsa?? YUM, where is that recipe? Thanks, and I, too, worry about starting up the grill & not needing the fire blanket.
