This Mexican Street Corn Salad (Elote) was delicious and a perfect accompaniment to chili lime marinated and grilled boneless chicken thighs. It's also quick and easy--always a bonus! I could not find Cotija cheese in our grocery store (they are renovating it and nothing is where it used to be) but I read that feta cheese was a good substitute. I omitted the jalapeno because hubby is sensitive to spicy things.
2 tablespoons vegetable oil (I used olive oil)
4 cups fresh or thawed frozen corn kernels
1/2 teaspoon kosher salt or to taste
1 clove garlic, minced
1/4 cup chopped fresh cilantro
1 small jalapeño pepper, seeded and finely chopped (optional)
3 tablespoons crumbled Cotija cheese or feta cheese
2 tablespoons mayonnaise or Mexican crema
1 tablespoon freshly squeezed lime juice
1 1/2 teaspoons chili powder
Heat the oil in a large skillet over medium-high heat until shimmering.
Add the corn and cook, stirring, until toasted and golden brown, about 15 minutes.
Add garlic and cook for 1 minute more. Remove from
the heat and let the corn cool for a few minutes.
Transfer the corn to a large serving bowl. Add the cilantro, optional jalapeño, Cotija or feta, mayonnaise, lime juice, and chili powder. Stir to combine. Top with more cheese if desired.
Can be served warm or at room temperature.

There is a Mexican restaurant in Bar Harbor, ME that is run and owned by a Mexican family. It started as a joke, but whenever someone orders their elote corn (on the cob), everyone in the kitchen calls out loudly, "Elote!' Their food is great!
