Strawberry Bread #recipe @vmburns

VMBURNS: I love strawberries and I was looking for an easy recipe that would make a quick and delicious breakfast. I stumbled across a recipe for Strawberry Bread. Yep, you read that right. I said, STRAWBERRY and BREAD. Okay, my first attempt wasn't without its challenges. I didn't dice the strawberries enough. Guess what? I DON'T CARE!!!! I LOVE strawberries. I am completely fine with these big chunks of strawberries in and on top of my bread. However, if you prefer teeny sized strawberries then by all means, dice them. The recipe that I found from Taste of Lizzy T was much prettier than mine. Again, I don't care. It tasted great. I increased the vanilla, because. . . .duh vanilla. I also used vegetable oil instead of canola oil. It's what I had. I don't know that it impacted the taste, but the next time I make this (and there will be a next time) I'll try Canola oil and I might even dice those strawberries finer. Maybe.



STRAWBERRY BREAD




INGREDIENTS

  • 2 Cups Flour
  • 2 Cups Strawberries, diced
  • 1 1/2 Teaspoons Baking powder
  • 1/4 Teaspoon Baking soda
  • 1/2 Teaspoon Salt 
  • 3/4 Cup sugar
  • 1/2 Cup Milk
  • 1/2 Cup Canola oil (I used vegetable) or Coconut oil
  • 1 Large Egg
  • 1 1/2  Teaspoon Pure Vanilla extract
  • 2 Tablespoons Flour
  • GLAZE
  • 2 Cups Powdered sugar
  • 2 Tablespoons melted butter
  • 1/3 Cup Strawberries, finely diced
  • 1/2 Teaspoon vanilla extract
  • 1 Tablespoons heavy cream or Milk (Optional)

  • INSTRUCTIONS

    1. Preheat oven to 350 F. 
    2. Grease a loaf pan and set aside (I used Pam).
    3. Mix the sugar, milk, oil, egg, and vanilla and set aside. 

    4. Mix the flour, baking powder, and salt. Add the dry ingredients to the wet ingredients and stir until just combined. Don't over mix.

    5. Toss the strawberries in 2 Tablespoons of flour. Fold the strawberries into the batter.

    6. Pour the batter into a loaf pan. 

    7. Bake for 50-55 minutes until a toothpick inserted into the center comes out clean.
    8. Allow the bread to cool completely before adding the glaze.
    9. Mix the powered sugar, melted butter, and finely diced strawberries. You can add milk if the glaze is too thick, but you shouldn't need to. Trust me.

    10. Pour the pink glaze onto the bread once it is completely cooled.

      With Bailey’s sharp senses and Pris’s hometown know-how, can they prove to the community that they’re all barking up the wrong tree?

  2. Thank you for the delicious sounding recipe! I will be giving this recipe a try - and soon. We love strawberries in any form or recipe. Fortunate enough to have a Mennonite farm just down the road that grows strawberries every year.

  3. I can't decide between strawberry pie and strawberry shortcake. Both are favorites around our house. It seems like this recipe is versatile and blackberries, raspberries, or blueberries could be substituted. I think you could even use rhubarb if you mixed diced rhubarb marinate in a bit of sugar first.

    1. Alicia, I hope you like this one. Tossing the strawberries in flour before adding them to the batter is supposed to keep them from all sinking to the bottom of the bread. Also, you don't have to use the glaze, but if you do, make sure the bread is completely cool or the glaze will just sink into the bread. Personally, that's not a problem for me. :-)
