LUCY BURDETTE: believe it or not, before I met my husband, I was not a huge fan of chocolate anything. I would certainly eat a slice of chocolate cake if it was homemade, and put in front of me, but it was not my first choice. Give me a yellow cake with mocha frosting or a sponge cake with strawberries and cream or… But my husband and the kids and now the grandchildren are chocoholics so I have a regular repertoire of chocolate cakes. For this occasion, a friend whom I’d offered to bake a birthday cake for requested chocolate with chocolate. In order not to bore myself with the regular routine, I decided to try a chocolate cream cheese frosting. It was simple and just divine! It could go on any chocolate or vanilla or yellow cake. I made the same recipe to celebrate the big news that I received earlier this month, A CLUE IN THE CRUMBS was selected as the gold medal winner in popular fiction by the Florida book awards! So very thrilling and rewarding.
But now on to the frosting!
Ingredients
3 tablespoons cream cheese
3 tablespoons unsalted butter
1/2 cup good quality powdered chocolate, such as King Arthur
Teaspoon vanilla
About one cup of powdered sugar
When the cream cheese and butter are at room temperature, beat them together well. Add the vanilla and beat that in. Then gradually add the powdered sugar, beating well and tasting as you go. You could go over one cup if you think you need it, but I felt it was sweet enough, and the one cup made the chocolate and the cream cheese shine.
This recipe was enough to frost an 8 x 8” cake like this one. If you plan to make a layer cake, you should double the ingredients. I decorated with strawberries and birthday candles but honestly, the chocolate icing stands alone.

Cream cheese frosting with added flavors has been a staple here.
We have done the chocolate, vanilla, lemon, butterscotch, banana, etc. The cake with the frosting and strawberries looks delish. think I will do one today. Thanks for the inspiration.
