Stained Glass Window Cookies #Christmas #Recipe Peg Cochran/Margaret Loudon

 

 


These were fun and not a lot of work (no baking!) although stirring the chocolate into the marshmallow mixture took a little bit of elbow grease.  I couldn't find colored mini marshmallow but found Lucky Charms colored marshmallows.  They were a little too big, so I cut them in thirds.  (Granddaughter was a big help with this.) I also used store brand rice cereal.  The pistachios are option but they add a bit of color and crunch.

4 cups chocolate melting wafers

1 10-ounce bag colorful mini marshmallows

½ cup dried cherries (or cranberries)

½ cup Rice Krispies or other rice cereal

½ cup shelled and chopped pistachios (optional) 

 

In preparation: Spray a large, wide-mouthed bowl with cooking spray.  Lay a piece of parchment paper or wax paper, approximately 24 inches long, on the counter.


In the prepared bowl, place the marshmallows, cherries, cereal and pistachios (if using)

 


 




Melt chocolate wafers in a microwave-safe bowl for 1 minute.  Stir and repeat heating and stirring the chocolate in 20 second increments until chocolate is melted.  Stir until smooth.

 


 


 


Pour half the melted chocolate into the marshmallow mixture and stir quickly.  Pour remaining chocolate into mixture and stir until combined.  Move quickly before the chocolate begins to harden.

 


 


Pour chocolate mixture down the piece of wax or parchment paper and mold into a rough log shape.  Brings up sides of wax paper and twist ends to enclose mixture.

 


 


Let mixture harden at room temperature.  

 


 

 

Slice and serve!
