Tequilla Chili Lime Shrimp #Halloween #recipe @vmburns

 V. M. Burns: I love shrimp. However, I wasn't in the mood for tacos. So, I made this tequila chili lime shrimp with rice. The recipe called for jumbo shrimp, but I had large, not jumbo. The recipe also called for jalapenos. I wasn't in the mood for heat, so I left out the jalapenos. I also reduced the amount of garlic because, while I like garlic, it doesn't always like me. However, this dish could be customized to your taste. I love the citrus of the lime juice and zest and as you can see in the picture, I added a LOT of zest. Next time I make this, I will add the jalapeno and serve it with corn tortillas. If you're worried about the Tequila, don't be. Sadly, the alcohol cooks off.

Tequila Chili Lime Shrimp

Ingredients

  • 1 lb jumbo shrimp, peeled and deveined
  • 2 Tablespoons Tequila
  • 1 Tablespoon Olive Oil
  • 1/2 Teaspoon Kosher Salt
  • 1/4 Teaspoon Black pepper
  • 1 Teaspoon Smoked Paprika
  • 1 Teaspoon Cumin
  • 1/2 Teaspoon brown sugar
  • 1/4 Teaspoon Chili powder
  • 1/2 Teaspoon minced garlic
  • 1 lime, juice and zest
  • 1 Jalapeno, sliced without seeds (Optional)

Instructions

  1. Mix seasonings (salt, pepper, paprika, cumin, chili powder, and brown sugar) and coat shrimp.

  2. Heat Olive oil in a large skill over medium heat. Sauté garlic until fragrant.

  3. Place shrimp in the skillet in a single layer and cook for 3-4 minutes. Flip and cook for another 2-3 minutes until cooked through.

  4. Add lime juice, tequila, and jalapeños to skill. Cook for 2 minutes.

  5. Remove from heat and add lime zest.

I served with rice, and skipped the jalapenos, but these would be delicious in tacos.

MURDER IS A PIECE OF CAKE

With small town New Bison’s Spring Festival just around the corner, the pressure is on Maddy to continue her late great-aunt Octavia’s legacy. That means scoring the top prize and transforming Baby Cakes into Southwest Michigan’s must-visit bakery, even though her inexperience in the kitchen brings nightmares of humiliating tagged photos and scathing reviews.

There’s another reason for lost beauty sleep. A second bakery is opening in town under the ownership of CJ Davenport, a shrewd investor with a reputation for sabotaging anyone who gets in his way. And savvy, flashy Maddy tops his list. It’s a sticky spot to be in—more so when Davenport turns up dead with a Baby Cakes’s knife stuck in his back.

Maddy’s whole life just went from #thriving to barely surviving. Now, supported by the crafty Baker Street Irregulars and her new boyfriend, she must find the courage to face off against a killer who could very well get her name trending for the first and last time . . .

"Add lime juice, tequila, and jalapeños to skill." Skillet, perhaps?
Although, if you drink enough of the tequila you may develp new skills!
