Strictly for peanut butter lovers! And that includes me. The peanut butter flavour is very strong in this so be warned. If you don’t care for peanuts or peanut butter, this recipe is not for you. Otherwise, it’s fun and delicious, quick and easy. I served this over rice with a side vegetable of saluted brussels sprouts.
Ground Turkey with Peanut Butter and Ginger
Ingredients:
⅓ cup lime juice
1 tablespoon brown sugar
3 tablespoons fish sauce
1 small red onion, thinly sliced
Salt and pepper
3 tablespoons peanut
butter
1 tablespoon chili sauce
2 tablespoons vegetable oil
1 pound ground turkey
4 teaspoons grated fresh ginger
(from a 2-inch piece)
Instructions:
In a small bowl, combine lime juice, brown
sugar, fish sauce, and half of onion; season with salt and pepper. In another
bowl, whisk together peanut butter, chili-garlic sauce, and 6 tablespoons warm
water until smooth; set aside.
Heat oil in a large skillet over high.
Press turkey into skillet; season with salt and pepper. Cook, undisturbed,
until underside is browned, 3 to 4 minutes. Add ginger and remaining half of
onion; cook, stirring and breaking up meat with a spoon, until onion softens
and meat is cooked, 1 to 2 minutes.
Stir in peanut butter mixture. Remove from
heat, stir in lime juice and onion mixture.
