Taco Pasta #Recipe @Vmburns

VM Burns: After a couple of weeks of travel, I was finally at home. Home was good, but after two weeks away, my larder was limited. However, a grocery delivery mishap where I ordered 1 lb of hamburger and was delivered 5 lbs, meant that I wouldn't starve. However, what to make? I stumbled across a recipe and decided Taco Pasta was just the trick. Of course, I had to make some tweaks. I could have used my own taco seasoning, but that seemed like a lot of work. So, I went with a package. Creating your own will allow you to control the heat level.  The recipe called for cheddar cheese. The only cheddar I had needed to be shredded. I didn't feel up to shredding cheese, so I used an already shredded Fiesta blend. I also didn't have regular salsa. I had pineapple salsa. The pineapple salsa is sweet, which I liked. Next time I make this recipe, I may spice it up a bit with a medium heat salsa. I also added a bit of hot sauce to the recipe. I like Frank's Red Hot. 




INGREDIENTS

1/2 lb pasta (I used penne, but you can use whatever you have)

1 lb ground beef

1 packet of taco seasoning

1 Cup water 

1 Cup Salsa

1 Cup shredded cheddar cheese



INSTRUCTIONS

  1. Cook the pasta according to the directions on the box and drain. 
  2. Brown the ground beef in a skillet and drain the fat.
  3. Add the taco seasoning and water. Stir and cook until the water is gone.
  4. Add the pasta, salsa, and cheese to the ground beef and stir to combine.

    I love that you use what you have on hand to adjust a recipe. Being from the generation when you didn't run to the store daily or that stores might even be closed, we learned to do just that - adjust. It also makes you realize that sometimes the adjustments are better than the original recipe.
