Summer Salad with Vinaigrette @TinaKashian1 #Giveaway

Hello from TINA KASHIAN! My garden is producing Jersey tomatoes and cucumbers as well as many other vegetables and herbs. I love summer salads using these fresh ingredients and combining them with others, even canned goods. I’m sharing a summer salad using my garden tomatoes and cucumbers. It’s tossed with a healthy vinaigrette. It is easy to prepare and full of flavor. Enjoy!


Here's a picture of my Jersey tomatoes from this morning’s pick! I don’t use all of these in my recipe, but two beefsteaks. See below:

 


Ingredients:

½ cup canned kidney beans, drained and rinsed

½ cup canned chickpeas, drained and rinsed

2 large beefsteak tomatoes, diced

2 large, seeded cucumbers, chopped

2 tablespoons red wine vinegar

¼ cup extra virgin olive oil

1 tablespoon salt or to taste

½ teaspoon black pepper

 

Directions:

Drain a can of kidney beans, rinse, and add a ½ cup to a large bowl. Drain a can of chickpeas, rinse, and add ½ cup to the bowl. Peel and chop the cucumbers and dice the tomatoes. Add to the bowl.

In a separate bowl, whisk together the olive oil, vinegar, salt, and pepper. Add to the bowl and mix thoroughly. Refrigerate for an hour, then serve. Enjoy!

  2. I could dig into this, especially with home grown tomatoes. My favorite summer salad (so far) is Greek pasta salad.

  3. Oh! I never thought to add beans to my favorite summer salad of tomatoes and cucumbers with a balsamic vinegarette. I did add turkey bacon crumbles to it yesterday and it was a great match with the balsamic. Thanks for the idea and the chance to win. aprilbluetx at yahoo dot com

    1. I like beans so it's a great way to add fiber to a favorite salad. I also love bacon crumbles. Who doesn't love bacon!

  4. For me, nothing beats just a combination salad with all the fresh from the garden veggies - lettuce, tomatoes, onions, bell peppers, cucumbers, radishes, banana peppers and at times cauliflower. That being said, I also love making Cabbage Slaw with fresh cabbage, onions and bell peppers.

    Cabbage Slaw
    Ingredients
    2 lbs. cabbage, shredded
    1/2 cup onions, chopped
    1/2 cup bell pepper, chopped
    1/2 cup vinegar
    1/2 cup oil
    1/2 teaspoon celery seed
    1 cup sugar
    1 teaspoon salt
    Directions
    Mix sugar, oil, vinegar, salt, celery seed.
    Pour over mixture of cabbage, bell pepper and onion.
    Stirring occasionally. Let set at least one hour.
    Keeps for ages.

  9. This looks delicious and perfect for today! Thank you. My favourite summer salad is sweet potato salad. I cook sweet potatoes, atleast 1 person, cool and cube it. To that i added cranraisins, chives and a simple raspberry vinaigret that I buy at the store. Mix and let the flavours meld together for at least 1 hour. Sorry, no quantities I just eyeball everything.

  11. I made a salad last week with tomatoes, English cucumber, bacon, and feta with a vinaigrette. I also enjoy halving an avocado and pouring a dressing in the middle and just eating it out of the shell.

  13. My favorite summer salad is a cucumber onion salad with a vinaigrette dressing. My Mother always made it in the summer and it's still one of my favorites.

  15. I've been noshing on a caprese type orzo pasta salad this summer. I roasted the large container of cherry tomatoes, cut up a bunch of fresh basil and fresh mozzerella cheese, cooked half a box of orzo pasta, tossed it all together with half a jar of capers and some balsamic viniagrette and ate! I have also done this with feta instead of the mozzerella and have added some freshly cut up avocado. Tasty! makennedyinaz at hotmail dot com
