Summer Tart from @MaddieDayAuthor

MADDIE DAY here, trying to stay cool as I scramble to finish Murder in the Rusty Anchor, due on Wednesday!

Still, it's high summer. Around here that means picking blueberries from my own bushes and picking up raspberries and sweet corn at the farm stand. What better than an easy summer fruit tart for dessert after a delicious dinner of grilled salmon and corn on the cob?


Doesn't that pie look fabulous? That's how it tastes! I took the extra-easy route and used a premade pie crust, but of course you can make your own from scratch (which I'm more likely to do in the cooler months).


Summer Fruit Tart

 

Ingredients



1 prepared and baked pie crust (homemade or commercial), cooled

8 ounces softened cream cheese (not whipped)

1/4 cup sugar

1/4 cup sour cream

1 teaspoon vanilla

2 cups blueberries

1 cup raspberries

1/4 cup apple or currant jelly

 

Directions

Mix the cream cheese, sugar, and sour cream. 



Spread all over the cooled crust.



Arrange the fruit in any kind of pleasing motif.

Melt the fruit jelly in microwave or a small saucepan and paint on the arranged fruit with a brush.



Chill.

Serve as is or with whipped cream. And enjoy!

  3. WOW! That is an awesome, beautiful and yummy tart! I shall make it and enjoy it. I love cherry and peach pie, and never had blueberries or raspberries in a pie, so I must try your recipe.   11. Oh my! Sorry had to stop and whip my mouth cause it sounds that good. I live anything with cream cheese in it and then you added delicious berries.
