My granddaughter loves Rice Krispie treats so when I saw this recipe, we decided to try it. We used S'Mores flavored Oreos but this can be customized any way you like. We made them again with Caramel and Coconut Oreos and they were also good. Use your favorite flavor or try something new!
2 cups sandwich cookies like Oreos (approximately 18 cookies)
6 tbl. unsalted butter
1 10-oz package mini marshmallows
1/2 tsp. vanilla extract
1/4 tsp. kosher salt
4 cups Rice Krispies or comparable rice cereal
1/2 cup white chocolate chips (optional)
Grease an 8 x 8 inch pan and make a sling out of parchment paper. Grease parchment paper.
Put sandwich cookies in a zip lock baggie and crush with a mallet or rolling pin.
Melt butter in a saucepan large enough to hold marshmallows and cereal.
Add marshmallows to butter and melt over low heat, stirring frequently. Remove from heat when melted.
Stir in cereal and the crushed cookies until covered by the marshmallows.
Spoon into prepared pan. If desired, melt white chocolate chips and drizzle over the top. Let cool one hour before cutting.
