Carrot Loaf Bread #Recipe #giveaway by @vmburns

 Vmburns: I was in a mood for something a little sweet for breakfast, and decided on a carrot cake bread. I shredded the carrots myself instead of buying preshredded carrots because often the preshredded ones in the grocery store will be dry. The carrots help keep the bread moist. You can also add a bit of spiced pumpkin, applesauce, or even zucchini to help with the moisture. I love nuts, so there are LOTS in this recipe. If you aren't as fond of nuts as I am, you can replace the nuts with raisins or skip them altogether. It'll still be yummy. 


CARROT LOAF BREAD



INGREDIENTS
  • 3 Large eggs
  • 1 Cup sugar
  • 2/3 Cup vegetable oil
  • 2 Cups flour
  • 1 1/2 Teaspoons baking powder
  • 1 1/2 Teaspoon cinnamon
  • 1  1/2 Teaspoon nutmeg
  • 1/2 Teaspoon salt
  • 1 1/2 Cups shredded carrots
  • 1 1/2 Cups chopped walnuts

  • INSTRUCTIONS
    1. Preheat the oven to 350 degrees.
    2. Beat the eggs.

    3. Mix the sugar and vegetable oil. Add the flour, baking soda, cinnamon, nutmeg, and salt, and combine. 

    4.  Fold in the carrots and 1 cup of the walnuts.

    5. Grease a loaf pan and pour in the batter. Top with the remaining walnuts.

    6. Bake for 45 minutes to one hour. When a toothpick inserted into the center comes out clean, then it's done.
    7. Allow to cool for approximately 10 minutes before slicing.

    1. Thank you for the delicious sounding recipe for CARROT LOAF BREAD! Yes, I love lots of nuts too. Mom had the theory that if one cup was good then two cups would be better. :)

      Would love to read and review BOOKCLUBBED TO DEATH, but I can only read paperbacks. Medical issues prevent me from reading ebooks. I can't sit at the computer long enough to do the book justice or to satisfy my desire to read. So don't enter me in the contest. I'd rather someone win it that could read it.

    4. Sounds tasty, will likely do a mix of nuts and raisins. I am mostly indifferent to nuts in breads. I don't mind some, but not tons. If I do add them, I prefer pecans to walnuts. Overall, I would rather eat my nuts salted and separate from baked goods. Read and loved Bookclubbed to Death, so no need to include me in the giveaway.

    7. welcome today and thanks for sharing this yummy looking recipe. oh yes I love nuts in my recipes. different nuts for different things. and then if I am taking it somewhere, I will either omit the nuts or if I know who is allergic to which nut, I may substitute or omit quilting dash lady at comcast dot net

      1. Lori, that is very thoughtful (substituting and omitting). Some folks will just make it with nuts and put a sign warning of the potential hazard. Which means, one less dish for the person to enjoy. Thanks for sharing.

    9. I love nuts in baked goods, walnuts, pecans, almonds, etc. They are all welcome.
      You're right that the pre-shredded carrots are dry. I use them in our daily lunch wraps from some healthy crunch and they work great for that. But for your bread, freshly made it the way to go.

      1. Libby, I'm all about the nuts. I haven't found one that I don't like, so I think we have something in common. Freshly shredded can be work, but I throw them in my KitchenAid chopper and they're shredded in no time. So easy. Thanks for the comments.

    13. Love nuts, but can have a reaction to too many walnuts, so I'd use pecans in this recipe. It's right up my alley - I love quick breads, and carrot cake is my favorite. Your book sounds fun!

I am going to mention this one and see if he will make for me.I am batling a disease called RSD and fingers are deformed along with several other things that is why I only read print books so I thank you if I win an ebook but I would have to pass.     18. Our daughter's favorite cake is carrot cake so I bet she'll like this bread too. I'll use pecans instead of walnuts. The first time I make this I'll use the recipe as is except for the nuts but the next time I'll try the applesauce! I love baking with applesauce when what I'm baking needs a moist texture.
