Armenian Green Beans or Fasolia @TinaKashian #Christmas

Hello from TINA KASHIAN! January 6 is Armenian Christmas. Some orthodox religions also celebrate Christmas on the 6th. It’s a time of mouthwatering food and family celebration. I have a mixed household and we celebrate both December 25 on my husband’s side and January 6th on my side. I’m sharing a dish we call “fasolia.” It’s a green bean dish slowly cooked in a savory tomato sauce. It’s often served with rice pilaf. It’s one of my favorite vegetarian dishes.

 

Merry January 6th!


 

 Ingredients:

2 pounds fresh green beans washed and cut

¼ cup extra virgin olive oil

1 onion, diced

2 cloves garlic, minced

One 8 ounce can of tomato sauce

1//4 cup freshly squeezed lemon juice

Salt and pepper to taste

 

Directions:

Wash and cut green beans.


 

Heat oil in a large skillet. Add the onions and saute until they are transparent. 


 Add the garlic and saute for two more minutes. Add the tomato sauce and the lemon juice and mix until hot. 

 

Add the green beans and bring to a simmer. 



Then lower the heat and cook for 25 minutes or until the beans are tender. Add salt and pepper to taste. Serve with rice pilaf. Enjoy!

  1. For me, I think it would be French Fried Cauliflower. It's a combination of flour, parmesan cheese, salt and pepper dredge after going through an egg and milk wash. Allowed to rest a bit on wax paper before being deep fried to golden brown. With the price of cauliflower in our area jumping to $8 a head with the heads to size of a softball, it may be a rare treat for us until the price comes back down.

  2. I love green beans and that sounds delicious. One of my favorite vegetarian dishes is a baked yellow squash my mom makes. It's just sliced yellow squash sprinkled with parmesan and baked until tender.

  3. That looks very tasty! When it comes to veggie dishes I like anything (provided it has no okra, sweet potato, fennel, peanuts or tree nuts - the latter two I am fatally allergic to!)

  4. My favorite is green bean and tomato salad. Saute the green beans with onions and garlic add cubed fresh tomatoes with Italian dressing and marinate in the refrigerator.

    This sounds tasty, but I'm intrigued by how long you cook it. The beans still have some snap to them after this muchi time?

  7. This sounds wonderful. Love green beans around here. Must try this. Spaghetti squash a dozen different ways is a favorite vegie dish. One of my go to dishes is with mix the squash with feta, cut up cherry tomatoes, cucumbers, Kalamata olives, basil and a bit of vinegar to taste, your choice. I'm a huge fan of white lemon balsamic.
