Cranberry Sauce Bread #Thanksgiving #Christmas from @MaddieDayAuthor #giveaway

MADDIE DAY here. I know I'm not alone in having leftover cranberry sauce from Thanksgiving. I always make my own from whole berries, and in recent years it includes orange juice. But we never eat it all during the turkey feast. I don't eat jam on toast, and Hugh isn't particularly fond of cranberry sauce. 


What to do? I'm by heritage and by nature in the "Waste Not, Want Not" camp, and I was determined not to let the sauce languish until it molded and joined the compost heap. Then I thought about banana bread and applesauce bread. Why not cranberry sauce bread?


The bread turned out pink, tangy, and delicious, and could easily be a Christmas brunch offering. Read down for a holiday book giveaway.

Cranberry Sauce Bread
Note: I didn't have any oranges on hand, so I used the juice of three clementines instead of OJ. I also like to make quick breads with whole wheat flour to counter the sugar, but of course you can use white flour.


 
Ingredients
½ cup butter, softened
¾ cup sugar
1 large egg
1 teaspoon pure vanilla extract
1/3 cup orange (or clementine) juice
1 ¼ cup whole berry cranberry sauce
2 cups all-purpose flour (or whole wheat)
2 teaspoons baking powder
1/2 teaspoon kosher salt
1 teaspoon cinnamon
½ teaspoon nutmeg
 
Directions

Preheat oven to 350°F. Grease a loaf pan or line with parchment paper.


Beat butter and sugar until light and fluffy. Add egg and beat. Add vanilla, orange juice, and cranberry sauce.


Mix baking powder, salt, and spices into flour. 



Stir in flour mixture until barely blended. 

Fill loaf pan. Bake about 1 hour or until golden brown and toothpick comes out clean. Cool on a wire rack.

Option: to make it more like a cake, mix 1 cup powdered sugar with 1-2 tablespoons of orange juice and a pinch of orange zest, and glaze.
Slice and spread with cream cheese or butter, or enjoy plain with coffee or a glass of sherry.

  2. Thank you so much for the Cranberry Sauce Bread recipe. I, too, hate to waste anything, but with it just the two of us cranberry sauce is usually one of those things that ends up with unused leftovers.

    My favorite quick bread depends on the season. Most of the time it would be either banana bread or a version of the hummingbird cake. During the fall I make a lot of pumpkin spice ones.

  3. I love cranberry sauce. Having leftovers usually doesn't happen because I eat a lot of it, and the rest of the family likes it as well. I'll have to have cranberry sauce especially for this recipe, I think everyone would enjoy it.
    And if we don't do sauce, there's a salad that's a favorite- whole cranberries, apples, mini marshmallows, and a little whipped cream and sugar to the desired tartness/sweetness.

  5. welcome today. thanks for sharing this wonderful looking recipe. normally I just eat the left over cranberries with meat and veggies.. But this looks fantastic. Now I will have to try. thanks. I love to make zucchini bread with walnuts. We usually have plenty of zucchini in the summer. I will also freeze the zucchini in the right portions so I can make my bread in the winter also. quilting dash lady at comcast dot net

  7. We rarely have much cranberry left. I make a cranberry chutney as opposed to cranberry sauce and it usually goes quickly. My favorite quick bread is either banana chocolate chip or lemon blueberry. Both delicious! May have to make some cranberry sauce though, just to try this bread. It sounds yummy! Thanks for the recipe.

  13. I make my own cranberry sauce, and sometimes some is left.... I think it might be interesting to add some orange marmalade & cut back a bit on the orange juice in this recipe. I sometimes sneak the marmalade into the cranberry sauce for a difference, but my son then complains. I will try out this bread for Christmas, to go along with our Christmas turkey & ham dinner!!   14. Thank you for sharing this recipe! I used half of my leftover cranberry sauce in Cleo Coyle's cranberry cookie recipe. I also make my own cranberry sauce and hate to toss it after getting the flavors balanced just right, even though I am the only one who eats it.   18. Perfect idea! I always make raw cranberry relish with half the bag of cranberries, I posted that recipe a while ago, and yesterday i made a cooked chutney with the other half adding apples, raisins, spices and clementine zest. I like the clementine flavor better than oranges and usually use it instead. We are having pork chops and will eat some of the chutney with them, and the rest will go into a quick bread! My favorite quick bread is eggnog bread with streusel eggnog topping. This Thanksgiving I had some eggnog left but not quite enough for the recipe so I added a mushy banana- family raved about it!

  19. I'm agree with your "waste not, want not" - I don't like to throw food away (imagine there are lots of people are starving around the world).. Yes, we also make our cranberry sauce, and we freeze the extras to be used later)..Thank you for sharing this recipe, I think I'll try it since I have extra cranberry sauce 😉.   21. I make fresh cranberry sauce and there is usually none left because I don't make such a large amount. I also put a couple of tablespoons of Grand Marnier and some orange zest in it. yum

  22. Oh goodness I love to make a banana bread and then share with my neighbor and she loves it. We both are bakers and love to bake so we go back and forth with different things. She makes cakes and decorates them so pretty since she took a decorating class she is asked to bring one of her cakes everywhere. peggy clayton ptclayton2 at aol.com
