Hello from TINA KASHIAN! Mac and cheese is a favorite in my house. My teenage girls prefer the box mac and cheese over homemade. In my quest for everyone to eat healthier, a friend suggested substituting cauliflower for pasta. I was skeptical but decided to give it a try. To my surprise, it was delicious, and it was a hit in my house. I modified this recipe from “the Recipe Critic,” and it is not difficult to prepare. I hope you try it and enjoy as well.
Ingredients:
2 pounds cauliflower
¼ cup butter
¼ cup all-purpose flower
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
2 cups milk
3 cups shredded cheddar cheese divided
Directions:
Preheat oven to 350 degrees Fahrenheit. Spray 9x13 inch baking pan with cooking spray. Bring a large pot of water to boil.
Add cauliflower to the boiling water cook for five minutes. Remove cauliflower and place in a bowl. In a large saucepan, melt butter over medium heat. Whisk in flour, salt, black pepper, and garlic powder. Cook for 2-3 minutes while stirring. Whisk in milk and continue to cook over medium heat while whisking until thickened. Remove from heat and stir in two cups of shredded cheddar cheese until melted.
Mix cauliflower with cheese sauce and add to casserole baking dish. Top cauliflower with the remaining one cup shredded cheddar cheese.
Bake for 20 minutes until golden and bubbly. Enjoy!

Our standard, often eaten, comfort food has to be Mac ‘n’ Cheese. I believe hubby could eat it every day.
ReplyDeleteAnother dish that I love and would eat more often if I could would be Green Bean and Shoepec Corn Casserole. It goes with everything and is fabulous just one its own. It’s good right out of the oven or as leftovers. With just being the two of us, I often make it in two casserole bowls so that that topping stays crunchy on each serving.
Green Bean & Shoepeg Corn Casserole
Serves 8
Ingredients
1 can French style green beans, drained
1 can white shoepeg corn, drained
1 can celery soup, undiluted
1 ½ cups grated Mild Cheddar
½ cup sour cream
½ cup chopped onion
1 can water chestnuts, finely chopped
1 roll or tube of Ritz crackers
1 stick of butter, melted
Spray casserole dish with non-stick spray.
Place drained green beans in casserole dish.
Top with drained shoepeg corn.
In bowl mix celery soup, cheddar cheese, sour cream, onions and water chestnuts until combined. Spoon on top of veggies in casserole dish.
Crumble crackers in bowl and drizzle with melted butter. Stir to coat crackers. Sprinkle over top of cheese mixture in casserole dish.
Bake in a 350 degree oven uncovered for 40 minutes.
NOTES: This goes great for a potluck dish. It’s great hot, warm, or room temperature. It never seems to make it to the refrigerator as leftovers but I’m sure it would reheat nicely too.
Another comfort food for us is homemade vegetable soup. Having a garden means lots of fresh veggies which makes it all the better.
