Hello from TINA KASHIAN! I wanted a change from chicken breasts and decided to try chicken thighs. This recipe adds a lot of flavors and is not difficult to make. The chicken thighs are juicy and delicious. The hardest part for busy parents is to take the time to marinade the chicken in advance. I hope you like this recipe as much as we did in my house.
Ingredients:
2-1/2 pounds boneless chicken thighs
3 tablespoons extra virgin olive oil
½ teaspoon minced ginger
4 tablespoons honey
1 tablespoon ketchup
5 tablespoons soy sauce
3 cloves minced garlic
Salt and pepper to taste
Directions:
Pat the chicken thighs dry and season both sides with salt and pepper. In a mixing bowl combine olive oil, ginger, honey, ketchup, soy sauce, garlic. Mix well. Place chicken thighs in the bowl with the marinade and mix to coat the thighs. Cover bowl with plastic wrap and place in the refrigerator for one hour.
Preheat over to 400 degrees Fahrenheit. Place chicken thighs and marinade in a baking dish.
Bake for 40 minutes, or until chicken is cooked through. Halfway through, flip the chicken.
Serve with your favorite side dish. Enjoy!
