Easy Chicken Parmesan

Hello from TINA KASHIAN! Like most mothers, my days are busy with the day job, then with getting the kids where they need to be, then scrambling to cook dinner. I’m sharing an easy Chicken Parmesan recipe that I modified over time. It’s tasty and quick to prepare.

 

Ingredients

4 skinless, boneless chicken breasts

Salt and freshly ground black pepper

2 eggs

1 cup Panko breadcrumbs

¾ cup grated Parmesan cheese, divided

2 tablespoons all-purpose flour

½ cup olive oil

½ cup marinara sauce

¼ cup fresh mozzarella, cut into small cubes

2 teaspoons olive oil

 

Directions:

Preheat oven to 450 degrees. Place chicken breasts on a cutting board. Cover with plastic wrap. Firmly pound chicken with the smooth side of a meat mallet to an even ½ inch thickness. Season with salt and freshly ground pepper.

Beat eggs in a bowl and set aside. Mix breadcrumbs and ½ cup Parmesan cheese in a separate bowl and set aside. Place flour in a bowl and dip chicken into flour, evenly coating both slides of the chicken. Dip flour-coated chicken breasts into the beaten eggs. Transfer the chicken to the bread crumb mixture. Press the breadcrumbs into both sides of the chicken. Repeat for each chicken breast. 


 

Heat 1/2 cup olive oil in large skillet on medium-high. Cook chicken breasts in the oil until golden, about two minutes per side. The chicken will finish cooking in the oven.


 

Transfer chicken to a baking dish. Top each chicken breast with 2 tablespoons marinara sauce. Layer each breast with equal amounts of mozzarella cheese. Sprinkle with any remaining Parmesan cheese and drizzle with ½ teaspoon olive oil. 


 

Bake until the cheese is bubbly, and the chicken breasts are no longer pink in the center. Serve with pasta. Enjoy!

  1. Nice and easy.
    When I'm really wanting to go quickly, I skip the breading and just layer the chicken in a pan with the sauce and cheese. It all bakes together nicely.

  3. Lately my favorite go-to meal for dinner is a can of chicken with pad thai rice noodles all mixed together with hoisin sauce. I sprinkle chopped green onions on top of mine. Anything you like would be good on top though. My husband likes corn and peas.
