Beet, Orange and Goat Cheese Salad from @TinaKashian1

TINA KASHIAN: I like beets. I like them pickled, roasted, and even canned. I attended a cooking class, CozyMeals, with my husband recently. It was a fun date night and we both learned from the chef. I posted a different recipe from that evening (chocolate lava cake) earlier. I’m sharing a recipe for beet, orange, and goat cheese salad for this post. This recipe is easy to prepare and delicious.


 

Ingredients:

2 large beets or 3 small beets

2 oranges

¼ cup coat cheese

Raspberry dressing

 

Directions:

Remove the leafy greens of the beets. Place beets in a pot and cover with two inches of water. Cover the pot and bring to a boil. Lower to a simmer for an hour for large beets and thirty minutes for smaller beets. You should be able to gently pierce them with a fork when they are done. You do not want them to be mushy. Remove from water, place in a bowl, and refrigerate overnight. 


 

Peel the cold beets. Slice the beets. Slice the oranges. 


 

Alternate slices of oranges with beets on a plate.

 

 Sprinkle the goat cheese on the orange and beets. Drizzle raspberry dressing on top. Enjoy!

    I didn't know how good beets are until my sister grew them. What a difference from the sad, overcooked frozen/canned ones I had as a kid!

    1. Hi LIbby, This is my goal this summer. I plan to grow them and see how they turn out. My local Wegman's also sells them from the farmers market in the summer. I can't wait!
