Carrot Cupcakes from @MaddieDayAuthor

MADDIE DAY here, delighted to bring you celebratory cupcakes during my book release week! Batter off Dead is the tenth Country Store Mystery, so I threw a tenth book birthday party for the series on launch day.

 


The carrot cupcakes were fast, easy, and delicious. And aren't they sweet with their book cover flags?

Without further ado, here's the recipe. I adapted it from my favorite (and only) muffin recipe book, Wild about Muffins by Angela Clubb (1982). You can see it's well-loved!


Carrot Cupcakes

Makes 12 medium.

Ingredients

Cupcakes:
1/2 cup (1 stick) butter, softened
2/3 cup brown sugar
2 eggs
1/4 cup buttermilk
1 teaspoon vanilla
1 1/2 cup finely grated peeled carrot
1/12 cup unbleached white flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
Frosting:
8 ounces cream cheese softened
1/2 cup powdered sugar
1 teaspoon vanilla

Directions

Preheat oven to 375 degrees F. Grease a standard muffin tin, or line with cupcake papers.

Cream the butter and sugar. Beat in the eggs. 


Beat in buttermilk and vanilla. Stir in the carrots.


Mix dry ingredients, then mix with beater or fork until just moistened. Spoon into prepared pan.

Bake for 20-25 minutes until a toothpick comes out clean. Let cool.

Beat softened cream cheese, powdered sugar, and vanilla until smooth (mine wasn't that smooth, but I gave up early).


Frost the cupcakes and enjoy with a good book!

  4. With an abundance of blueberries, we enjoy a lot of blueberry muffins. All in all, I've not had a muffin or cupcake that I didn't love.

    We love this breakfast muffin which is a whole meal in one little cupcake.
    All In One Breakfast Muffin
    1 ¾ cup flour
    1 cup 3 minute oats
    ¼ cup sugar
    1 tsp. baking powder
    ¼ tsp salt
    1 egg, slightly beaten
    1 cup milk
    1/3 cup oil
    ½ pound bacon, cooked crisp and crumbled
    ½ cup shredded cheddar cheese
    1/3 cup onion - finely chopped
    1/3 cup bell pepper – finely chopped
    In bowl combine the dry ingredients (first 5) and set aside. Mix milk, egg and oil.
    Pour wet ingredients into the dry ingredients all at once. Stir only until moistened.
    Stir in bacon, cheese, onion and bell pepper.
    Fill greased muffin pan 2/3 full.
    Bake at 375 degrees for 15-18 minutes
    Makes 1 dozen muffins

  6. I like the idea of individual cupcakes, rather than a whole cake.
    I used to love corn muffins toasted on a grill with butter. Haven't had one in ages.

  7. Hi! I enjoy carrot cake and these cupcakes look like the perfect portion size. When my daughter turned one many years ago, we had a carrot cake birthday cake and everyone liked it. Thanks for sharing this recipe!
