Peanut Butter and Jelly Cookies #Christmas @LucyBurdette #giveaway

I can’t remember quite where I got the idea for these cookies, but my mind latched onto it instantly. I thought they’d be a nice addition to the cookie plate during the holidays. I’d made and liked peanut butter blossom cookies, and I thought the same recipe could be used as the basis for these. I chose raspberry jelly, though I think jam with seeds would be even better. You can use whatever you and your family prefer!



The base of the cookies is adapted from the New York Times. 




Ingredients


1 ¾ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

8 Tbsp (1 stick) butter, at room temperature

½ cup smooth peanut butter 

½ cup granulated sugar

½ cup light brown sugar

1 large egg

1 tablespoon milk

1 teaspoon vanilla extract

Raspberry or other favorite jam/jelly

Sparkle sugar for rolling


Preheat the oven to 375. Prepare two large baking sheets with parchment paper.


Stir together the flour, baking soda, and salt in a small bowl and set that aside.



In a bigger bowl, beat the butter, the peanut butter and the two sugars together until smooth. Beat in the egg, the milk, and the vanilla.



Gradually beat in the bowl of dry ingredients without over mixing. 



Form spoonfuls of the batter into balls, roll them in the sparkling sugar, and set them on the baking sheets. (These cookies don’t spread out much while baking.) (Bad picture, but I kept forgetting--at lease you can see my pretty blue oven!)



Bake for five minutes, then remove the pans. Make an impression in each cookie with the back of a spoon and fill with jelly. 


Return the pans to the oven for another five minutes or so until browning and puffed.

  1. I like the idea of PB and J cookies. What happens if you add the jelly before baking? I imagine it dries out a bit. The favorite Christmas cookie in our house is something we call Christmas biscotto. It is a vanilla bicotti with pistachios (for green), dried cranberries (for redO and white chocolate chips. My husband does not like them crunchy, so I save an "untoasted" batch for him. LRJ lroth@pcext.com

  4. What a clever idea! A favorite cookie is thumbprint cookies with raspberry jam. So this will be the new version. Love peanut butter cookies, with a twist. Yum

  5. Unfortunately, at this time of year all cookies seem to be my favorite. I am especially partial to one bowl brownie cookies, as is my family, so have to get my share first, ha ha! This sounds like another good addition to our cookie plate. Thanks for the giveaway.

  7. "MERRY EVERYTHING & HAPPY ALWAYS" says my neighbor's cookie gift bag.
    Each ziplock festively labeled: Gingerbread Biscotti, Linzer Cookies (raspberry), Seven Layer Magic Bars, Anisette Cookies, Sugar Cookies. All delicious, love in every bite, and the Magic ones might be my favorites. <3
