Vicki Delany’s Stained Glass Cookies #Christmas #Christmascookies

My mother made these cookies for Christmas all though my childhood, and long after. She always just called them Christmas cookies, but when I started sharing them with friends, I decided they needed a name.  This is the most basic of cookie recipes and is extremely easy to make. You can get the kids involved.

Note that the dough needs at least an overnight in the fridge before slicing



Stained Glass Cookies

Ingredients:

1 cup butter, room temperature

¾ cup brown sugar

½ tsp vanilla

1/8 tsp salt

2 cups flour

1 cup silvered almonds

½ cup red cherries, chopped

½ cup green cherries, chopped

Directions:

Mix all ingredients in the order given.

Using ¼ of the mixture at a time, roll into logs, approx. 1.5 X 1 inch. Wrap log in wax paper.

Refrigerate for at least 24 hours

Unwrap, slice dough into ½  inch thick rounds.

Lay rounds on a parchment paper covered baking sheet. Bake at 375 for about 10 minutes.

  3. The cookies look festive! When I first heard of Stained Glass Cookies, I think they were round. But they were in a cookbook of just cookies.

  5. I like the idea but can't face the colored cherries.
    Does the picture you've posted show them after cooking? It looks like they are still raw.
