#Christmas Eggnog Oatmeal from @MaddieDayAuthor #Giveaway

MADDIE here, with a yummy warming holiday oatmeal, just right to get you in the mood for a last day of wrapping and family and cooking.


Robbie Jordan serves this oatmeal in her country store restaurant at the holidays, and the recipe is included with my "Christmas Cocoa and a Corpse" novella in Christmas Cocoa Murder, which released in 2019. Read down for a double giveaway!

Eggnog Oatmeal

Makes two servings.


Ingredients

1 cup milk

1 cup eggnog - commercial or homemade using the recipe of your choice

1/4 teaspoon salt

2/3 cup quick steel cut oats

Nutmeg

Directions

In a medium saucepan, bring dairy just to a boil. 

Stir in oats and salt, reduce the heat, and simmer uncovered for 6 minutes or until desired texture. Sprinkle nutmeg on top.


Serve hot.

  1. Merry Christmas. Thank you for the recipe. I dont like eggnog drink. But I dont like yogurt either. one morning my husband made me oatmeal and instead of milk he put blueberry yogurt in it. It was actually pretty good.

  3. Never being a big breakfast person, I had problems figuring out what I did want in the morning once I started taking morning medicine that recommended taking with food. My Mom use to make All In One Breakfast Muffins. They are yummy and very easy to make. Here's the recipe.
    All In One Breakfast Muffin
    1 ¾ cup flour
    1 cup 3 minute oats
    ¼ cup sugar
    1 tsp. baking powder
    ¼ tsp salt
    1 egg, slightly beaten
    1 cup milk
    1/3 cup oil
    ½ pound bacon, cooked crisp and crumbled
    ½ cup shredded cheddar cheese
    1/3 cup onion - finely chopped
    1/3 cup bell pepper – finely chopped
    In bowl combine the dry ingredients (first 5) and set aside. Mix milk, egg and oil.
    Pour wet ingredients into the dry ingredients all at once. Stir only until moistened.
    Stir in bacon, cheese, onion and bell pepper.
    Fill greased muffin pan 2/3 full.
    Bake at 375 degrees for 15-18 minutes
    Makes 1 dozen muffins

  4. I can't picture breakfast without scrambled eggs! They need to be dry, eaten with yellow mustard, and not have any nasty pepper on them!

    I would also like some tasty pastries--bearclaws, Danish pastries, croissants filled with chocolate, or filled with grape or strawberry with cream cheese! Etc.! Etc.!

  12. Biscuits & Gravy is my favorite comfort breakfast food. It reminds me of when I was a little girl, going out to breakfast with my Grandpa on Saturdays. 💛 After breakfast we would go to the swap meet together and he’d always give me $2 and tell me not to spend it all on one boy 😂 He would have me wrap my little hand around his pinky as we walked down every aisle looking for secondhand treasures… wow! That took me down memory lane! 😁
