Mediterranean Kufta from @TinaKashian1

Hello from TINA KASHIAN! Mediterranean kufta is a delicious alternative to the traditional meatball. The recipe is made with ground lamb, but you can also use ground beef or turkey. The seasonings are what make this dish different. You can also serve the kufta with tahini sauce (which I will share another time) or even tomato sauce. I hope you enjoy this recipe! 


 

Ingredients:

1 lb ground lamb (you can also use ground beef or turkey)

¼ cup chopped onion

3 tsp minced garlic

2 tsp dried oregano

½ tsp ground cumin

½ tsp salt

¼ tsp black pepper

1 large egg

½ cup breadcrumbs

¼ cup freshly chopped parsley

1 tsp dried mint or 1 tbsp freshly chopped mint

 

Directions:

Preheat the oven to 400 degrees. Place ground meat in a large mixing bowl. Add onion, garlic, oregano, cumin, salt and black pepper. 

 


 

Mix well. Add egg, breadcrumbs, parsley and mint. Mix well. 

 

 

Form mixture into "meatballs" and place on a baking sheet. Tip: I use a parchment-lined baking sheet for easier clean up. It also prevents the kufta from sticking to the baking sheet.

 

 

Bake for 15-30 minutes. Turn each kufta halfway through baking time.

  1. Love my Mom's recipe for lasagna that an Italian neighbor taught her. I was fortunate enough to get the recipe written down before Alzheimer would have prevented it. I actually stood beside Mom and as she shook ingredients in her hand, I would measure them. When I had a first version of the recipe, then I would fix it and Mom was taste and we fine tuned the recipe until it got Mom's full approval.

    1. I really wish I had done that with my grandma's biscuits. I know what ingredients she used, and she never really measured any of them, but I haven't quite hit on the same taste and texture as hers.

    2. Hi Kay, I love lasagna and it's one of my husband's favorite Italian dishes. My mother never measured anything either. I remember watching her and trying to write down the ingredients. A pinch of this. A handful of that. Now that she has passed, I try to make her recipes. They come close, but never exactly like hers. Other people like the dishes and say they are the same. But they are different to me. I think it's my memory of her cooking.

  2. An interesting recipe. Thanks for sharing. I have a number of favorite dishes with ground beef. Taco meat with my own mix of spices, stuffed peppers, meatballs with my own mix of spices, chili,etc

  4. Spaghetti & meatballs is one of our favorite meals but I always hesitate to do meatballs because I am not sure of when they are completely done when cooking them in a skillet so baking them will be the answer to that problem! I like the idea of using cumin in meatballs. It's something I use in all of my Tex-Mex recipes. I've never used lamb. I don't think here in east Texas it's a common ingredient but we'll see if it's available because now I'm curious! Thank you for sharing the recipe.

  7. I love using every kind of ground meat.BIG Yes to tacos,enchiladas,lasagna,Italian sauces,meatloaf,Salisbury steak,stuffed veggies,moussaka,pasticcio, Swiss steak, burgers, you name it! Meatballs, yum! I make every kind besides just Mom's Sicilian, including Swedish, Asian, & Greek, served with tzakziki. Meatball sandwiches are always a fave! I've gotten a lot of good ideas thru the years using Pinterest, too!
