Delicata Squash Rings from Vicki Delany

 It’s squash season and I am inundated with squash.  I’m not a huge squash fan, although I do like it, so I’ve been looking up suggestions about what to do with it all.  Turns out, sometimes it couldn’t be any easier.  Delicata squash has a very soft rind, so it doesn’t have to be peeled and you can eat it.

What could be easier than this recipe for preparing the vegetable.  It’s so yummy you can even eat them as a snack as well as a side dish for your main meal

Sauted Delicata Squash

1 Delicata squash

1 hot pepper (optional and to taste), finely chopped

2 tbsp butter

Salt and pepper

Simply slice the squash into ¼ inch rings.  Remove seeds.  Melt butter in frying pan, add pepper (if using) and then squash rings in one layer.  Cook over medium heat, flipping regularly, until the squash is browned nicely. (about 15 – 20 minutes because you don’t want to cook it too quickly).  Season with salt and pepper.
