Mediterranean Baked Feta Pasta from @TinaKashian1 #Giveaway

Hello from TINA KASHIAN! I love pasta dishes and this one has a Mediterranean flair with Feta cheese instead of mozzarella cheese. I have two teenage girls and we first saw a similar recipe online. We added ingredients to make it our own, and everyone in my house enjoyed this dish. It’s not difficult to make and if you like the taste of Feta cheese, then you will like this dish. 


Ingredients:

8 oz block of Feta Cheese

1-quart grape tomatoes, uncut and whole

3 gloves of garlic, minced

1 teaspoon Italian seasonings

¼ cup fresh parsley, finely chopped

3 tablespoons extra virgin olive oil

8 oz of pasta (I used Radiatore pasta but you can use ziti, macaroni, or any other type of pasta)

Salt and Pepper to taste


 

Directions:

Preheat oven to 400 degrees F. Place the block of Feta cheese in a 8 X 8 baking dish. Scatter the grape tomatoes around the feta cheese. Drizzle olive oil over the grape tomatoes and the Feta cheese. Add the minced garlic, Italian seasonings, and salt and pepper to the tomatoes. Mix tomatoes until they are well coated. Bake for 25 minutes. 


While the Feta and the tomatoes are in the oven, cook your pasta according to the package instructions.

After the Feta and tomatoes have baked for 25 minutes, remove them from the oven. Feta should be soft and creamy, and the tomatoes will have burst. Using a large spoon, mix the Feta and the burst tomatoes. If some of the tomatoes did not burst, use the back of a spoon to gently press on the unburst tomatoes until they do burst.


 

Thoroughly mix the feta and the tomatoes. Add the cooked pasta into the sauce and mix until well-combined. Sprinkle the minced parsley on top and serve. Leftovers can be refrigerated for up to three days and reheated. Enjoy!

  1. After making extensive plans for a bucket list trip only to have to cancel due to covid, we have been hesitant to make "big" plans for 2021. With that being said and a lot of restrictions lifted, we want to do something, but are limited due to medical issues and still being cautious. We have a couple short (2 & 3 day trips) in neighboring states for photo opportunity places and just some get out of the house time. About the only longer trip we have planned is going to Amish communities in the early fall and to a wildlife refuse in Missouri in December to see the influx of eagles. Sad to say but didn't plan anything that couldn't be cancelled easily if need be. We are however working on some big plans for 2022 with the thought that things will continue to get better for such travel plans.

    Thank you for the recipe for Mediterranean Baked Feta Pasta. Hubby is not a big fan of feta, but some good friends are. I can see this being on the table when they come to visit. Sounds yummy to me!

  2. Hi Kay! We have canceled plans to travel to Disney World three times due to Covid. Even my two girls understand after all this time. Our trip to the shore is close by (we live in South Jersey) and we are going for only a couple days. We do hope to travel more in 2022 as well! I know Feta cheese is an acquired taste, but this recipe was easy to make. I hope those that like Feta enjoy it. Thanks for stopping by!

    1. Yay! We live close to the Jersey shore and I vacationed there every summer as a kid and we now take our own girls. My Kebab Kitchen series is set in a fictional town of Ocean Crest which is a combination of Ocean City, NJ and Wildwood Crest. We are visiting both this summer.

    2. Strangely enough, my two favorite shore points in NJ are OC and Wildwood from when we were kids. I wasn’t so enamored going back as an adult with the swarms of teen gangs. Seaside also is too full of teens for me too, so we love OC and Cape May. We do a day in Atlantic City too.

I haven't been to the Jersey Shore in years; actually I haven't been much of anywhere so I am envying you! My granddaughter and I have plans to drive up to VT for the day and visit my aunt so I am looking forward to that.

  13. This book sounds fabulous. We loved the Jersey shore when we lived back there. You write so Beautifully that I can 'see' it clearly. We are in the Carolina's now Hot Steamy. Your books bring the Shore back. Your recipes-Yum- Feta- yum yum.
    Plans are staying home with beloved husband of 40plus HAPPY years where it's cool and safe.

  16. I have never been further east than Colorado in the states. I would love to take the family cross country and see it all. We have some fun places to explore here in Utah, but we sure miss the beach in California and Disneyland of course. We will be sticking pretty close to home and camping a bit this summer. We might make it to Yellowstone this year, looking into that now. I love that dish! Too late to make it for tonight's supper, but tomorrow is a whole new ballgame. Thank you for sharing a bit of yourself in your recipes and books with us.
