#Zucchini Noodles with Spicy Peanut Sauce from @DeniseSwansonAu

 

I’m always on the lookout for a healthy meatless dish, especially during Lent.  With zucchini taking the place of noodles in this recipe, you'll be able to eat a hefty amount without the hefty calorie count. Although the original recipe doesn’t have you cook the zucchini noodles or the other veggies, I throw them in with the tofu once it’s browned and let them get warm, but not limp.

I use my own spiralizer, but if you want to skip that step spiralized zucchini and summer squash are in the prepared produce section of most supermarkets.





  • 1/4 cup cornstarch
  • 1 (12-oz.) pkg. extra-firm water-packed tofu, drained, patted dry, and cut into 1-in. cubes
  • 1 1/2 tablespoons canola oil
  • 1/4 cup lime juice
  • 3 tablespoons creamy peanut butter
  • 3 tablespoons soy sauce 
  • 1 tablespoon ketchup
  • 1 tablespoon hot sauce
  • 1 tablespoon water
  • 2 teaspoons light brown sugar
  • 1 teaspoon grated ginger
  • 32 oz of spiralized zucchini 
  • 1 package of matchstick-cut carrots
  • Cilantro to taste

Place cornstarch in a shallow dish. Add tofu and toss to coat, shaking off excess. 








Heat oil in a large nonstick skillet over medium flame. Add tofu to pan and cook 8 to 10 minutes or until tofu is brown and crisp, stirring occasionally.







Combine lime juice and next 7 ingredients (through ginger) in a bowl, stirring with a whisk. 







Combine spiralized squash and carrots, sprinkle with cilantro.







Add to the pan with the tofu. Pour peanut butter mixture over the top and stir until mixture is warm, but veggies are still crisp.







Divide into four portions.

     Even though Lexie doesn’t believe the nonsense about her being the Ravenscraft Shield, she does believe her father was murdered—a father she never knew existed, and she investigates his death.

     Too bad, whoever killed her father, now wants Lexie dead as well.

    I need to be careful with the spiralized veggies. They can get mushy and unlikeable really quickly.

  3. I'm also looking for meatless lent dishes and this looks delicious. I admit that I've stayed away from tofu in the past, but I tried cooking with it recently and liked it. Thanks for sharing!

    1. The trick with tofu is to pat it dry and coat with cornstarch.

    2. I won over my husband to tofu by freezing it. Once thawed and drained, it has a wonderfully springy sponge like texture that soaks up whatever it's cooked in for flavor.
