I’m always on the lookout for a healthy meatless dish,
especially during Lent. With zucchini
taking the place of noodles in this recipe, you'll be able to eat a hefty
amount without the hefty calorie count. Although the original recipe doesn’t
have you cook the zucchini noodles or the other veggies, I throw them in with
the tofu once it’s browned and let them get warm, but not limp.
I use my own spiralizer, but if you want to skip that step spiralized
zucchini and summer squash are in the prepared produce section of most
supermarkets.
- 1/4 cup cornstarch
- 1 (12-oz.) pkg. extra-firm water-packed tofu, drained, patted dry, and cut into 1-in. cubes
- 1 1/2 tablespoons canola oil
- 1/4 cup lime juice
- 3 tablespoons creamy peanut butter
- 3 tablespoons soy sauce
- 1 tablespoon ketchup
- 1 tablespoon hot sauce
- 1 tablespoon water
- 2 teaspoons light brown sugar
- 1 teaspoon grated ginger
- 32 oz of spiralized zucchini
- 1 package of matchstick-cut carrots
- Cilantro to taste
Divide into four portions.

couple of hot guys hanging around for eye candy.
Even though Lexie
doesn’t believe the nonsense about her being the Ravenscraft Shield, she does
believe her father was murdered—a father she never knew existed, and she
investigates his death.
Too bad, whoever killed
her father, now wants Lexie dead as well.

ReplyDeleteThe trick with tofu is to pat it dry and coat with cornstarch.
DeleteI won over my husband to tofu by freezing it. Once thawed and drained, it has a wonderfully springy sponge like texture that soaks up whatever it's cooked in for flavor.
