Soft Chocolate Cookies from @TinaKashian1

Hello from TINA KASHIAN! I have a sweet tooth, especially for chocolate. I baked these cookies with my two daughters during the holidays, and they came out quite tasty. They are not overly sweet and are a perfect dessert. They are also good as a morning treat with a cup of coffee or tea.

 Ingredients:

1 cup shortening

2 cups firmly packed light brown sugar

Pinch of salt

1 teaspoon baking soda

¾ teaspoon cinnamon

½ teaspoon nutmeg

3 squares (3 ounces) unsweetened chocolate, melted

2 eggs

2 ½ cups flour

1 cup buttermilk

confectioners' sugar (optional)

Directions:

Cream shortening with the brown sugar.

Microwave 3 squares (3 ounces) of unsweetened chocolate until melted.

Blend in the salt, baking soda, spices and melted chocolate. Beat in the eggs Add the flour alternately with the buttermilk.

Chill the dough for at least an hour. Preheat the oven to 375 degrees. Drop teaspoons of the dough onto cookie sheets.

Bake for 15-20 minutes. Cool on wire racks. If you like a little extra sweetness, sprinkle with confectioners' sugar.

Enjoy!

Not even her impending nuptials can keep Lucy Berberian, manager of her family-owned Kebab Kitchen, from the Jersey Shore’s annual Polar Bear Plunge. But her dive into the icy ocean is especially chilling when she finds a fellow swimmer doing the dead man’s float—for real . . .

Who would kill a man in cold blood during Ocean Crest, New Jersey’s most popular winter event? When Lucy learns the victim is Deacon Spooner, the reception hall owner who turned up his nose—and his price—at her wedding plans, she can’t help wondering who wouldn’t kill the pompous caterer . . .

Perhaps the culprit is the wedding cake baker whose career Deacon nearly destroyed? Or the angry bride whose reception he ruined? With her maid of honor, Katie, busily planning Lucy’s wedding without her, Lucy will have to get to the bottom of this cold-hearted business in time for Kebab Kitchen’s mouthwatering Christmas celebration—and before her hometown’s holiday spirit washes out to sea . . .

  1. Thank you for the recipe for Soft Chocolate Cookies! We love cookies. In fact, hubby would rather have cookies than cake or pie. That means my cookie sheets stay busy and I'm always looking for more yummy cookie recipes.

One of my favorite cookies is Ozark Honey Oatmeal Cookies. It was a favorite years before we actually moved to the Ozarks. It naturally had honey as an ingredient as well as coconut and ground pecans. It's usually a hit with whoever I share them with and it's the most requested recipe. There are two things that make them amazing. One they freeze and ship well which I've done often and during all seasons of the year. And two they don't get hard or change their texture of taste with age. They are just as fresh a week after baking as the day you made them. That means that if you have company coming, you can make them ahead of time leaving time for all the last minute things.

Appreciate the chance to win a copy of "Mistletoe, Moussaka & Murder". It's on my TBR list. I can't wait for the opportunity to read Lucy's story and finding out who killed Deacon. Shared but hoping to be the very fortunate one selected.

  3. Sounds yummy.
You don't grease the baking sheets or use parchment paper? I gather they don't stick.

  8. Thank you for the recipe and the give-away. So many cookies, so little time. A true, basic shortbread cookie is my favorite = they are so good with tea (sometimes other cookies overpower the tea). madamhawk at gmail dot com
