Quinoa Chicken from @TinaKashian1 #giveaway

 

Hello from TINA KASHIAN! I’m thrilled to be a new addition to Mystery Lovers’ Kitchen. I’ve been a fan of the blog for a while and have discovered wonderful recipes.

For my first official 2021 post, I wanted to incorporate my New Year’s Resolution to eat a bit healthier. After all the rich holiday dishes, I’ve been looking to cut some calories as well as add fiber to my diet. I’m sure to still post tempting desserts in the future, but also healthier dishes. I’ve recently started cooking with quinoa. My first attempt was not successful. The dish was bland, and I steered away from quinoa in the supermarket shelves. But I decided to try again and had success. The best way to add flavor to quinoa is to cook it in chicken or vegetable broth, not water. Here’s a healthy dish that adds fiber without sacrificing flavor. 

Ingredients

1 cup quinoa

2 cups chicken broth

2 tablespoons olive oil

1 small onion, roughly chopped

2 cloves minced garlic

1-pound boneless, skinless chicken breast, cut in ½ inch cubes

14 ounce can of petite diced tomatoes

Salt and pepper to taste

 

Directions:

Rinse quinoa in a small strainer to remove any residue. 


In a saucepan, bring chicken broth and quinoa to a boil. Reduce heat to low, cover, and simmer for ten minutes. After ten minutes, turn heat off and leave saucepan covered on burner. Meanwhile, heat olive oil in a pot. Add chopped onions and garlic and cook until onions turn translucent, about 5 minutes.

Season chicken breast with salt and pepper, then add to pot. Cook until chicken is fully cooked.

 

Add cooked quinoa and diced tomatoes into the pot. 


 Add more salt and pepper to taste. Enjoy!

  3. I don't know much about "healthy" dishes, but we grow a lot of fruits and vegetables in the garden, and most meals are homemade so that's probably not too bad.

  4. I cook all my grains with broth. It really makes them so much richer tasting.
    Interesting that you don't use any spices or herbs. Depending on what you added, you could make this basic dish have a variety of finished tastes, Indian, Greek, Italian, etc.

    2. Tina, using broth instead of water is a great tip. I also agree with Libby, lots of herbs/spices really up the flavor. Also, sometimes I toast the quinoa first before cooking it, and I use less liquid to make it fluffier instead of mushy! Oh, and adding chopped nuts brings out the mild nuttiness of the grains, too.

  6. Hi Tina~ I'm also a fan of roasted or grilled veggies,lots of fresh fruit, and I think kebabs are healthy! In the summer I practically live on salads, esp. Tabbouleh, and gazpacho. In winter I love easy sheet pan dinners made of veggies and chicken or salmon. We also eat lots of different squashes all year long. lola777_22 at hotmail dot com

  8. I've been trying to add more veggies to eat healthier. Roasted brussels sprouts are a favorite. I've not had any luck making quinoa tasty either. Your recipe sounds good tho. I'll need to give it a try.
