Continuing our quest for healthier Asian food options, my
husband and I tried this dish. The combined prep and cooking time are a little
longer than we like, but the flavor more than made up for the work and it makes
three meals for us.
I was a little leery about using raisins, but their
sweetness balances the jalapeños.
- 16 ounces extra-firm tofu
- 2 tablespoons vegetable oil
- 4 garlic cloves, minced
- 1 tablespoon ginger paste
- 1 heaping teaspoon diced jalapeños
- 1 large sweet potato, peeled and chopped into 2-inch chunks
- 1 head cauliflower, cut into small florets (about 3 cups)
- 2 yellow bell peppers, chopped
- 2 cups slivered carrots
- 1 ½ tablespoons curry powder
- ½ teaspoon turmeric
- ¼ teaspoon cumin
- 1/8 teaspoon cinnamon
- 1 teaspoon salt
- 15 ounces (1 can) lite coconut milk
- 8 ounces (1 can) low-sodium tomato sauce
- 1 ½ cups low-sodium chicken stock (not in picture)
- ¼ cup cashews, coarsely chopped
- ½ cup seedless raisins
- Cashews for garnish
Remove the tofu from the package and drain. Slice the block
of tofu horizontally and wrap each in paper towel. Place a heavy cookbook or
frying pan over the tofu and press for 15 minutes. Remove the paper towels and
cut the tofu into 2-inch chunks.
Serve
immediately and garnished with 1 tablespoon of cashews.

that she can’t find on a map?
Unfortunately, once she
arrives in her new hometown, everyone there seems just a tad off-kilter and
Lexie’s cousin insists that the citizens are magical. At least there are a
couple of hot guys hanging around for eye candy.
Even though Lexie
doesn’t believe the nonsense about her being the Ravenscraft Shield, she does
believe her father was murdered—a father she never knew existed, and she
investigates his death.
Too bad, whoever killed
her father, now wants Lexie dead as well.

ReplyDeleteThis looks so yummy! I really hate prep work, so when I make curries and similar stews, I cheat by using frozen stir fry mix. Their texture works just fine in dishes like that.
