Simple Salad by @MaddieDayAuthor

MADDIE: It's the day after Thanksgiving, and I suppose I should post some brilliant new way to use leftover turkey. But I'm still recovering from hand surgery, and need to keep things simple. A light lunch sounds good too, after all the eating yesterday. 

So I bring you my simple salad. It features a poached egg, which I love on a salad. By the time you cut it up and mix it in with the other ingredients and the olive oil, it becomes part of the dressing. I give you a quick and easy way to poach it, too.

Maddie's Simple Salad

Serves one.


Salt and pepper not shown (and ignore garlic and soy sauce behind).

1 raw egg

Baby lettuce

Goat gouda

Baguette slices

Olive oil


Black pepper

Note: Exact amounts are up to you, and obviously add additional ingredients if you want or use a different dressing.


Drizzle olive oil on a few slices of bread and toast in a toaster oven.

Put a little olive oil in the bottom of a small bowl and rub it all around the inside (I rub the rest into my hand – a great skin treatment!). 

Break the egg carefully into the bowl. 

Place in microwave, cover loosely, and cook for forty seconds (your time might vary depending on your appliance).

Cut a bit of cheese into bite-sized pieces.

Spread the lettuce on a plate and add the cheese. Slide the poached egg on top. Sprinkle with olive oil, coarse salt, and freshly ground pepper. (Option: add a splash of vinegar or lemon juice.) Enjoy with the toasts.
