Shakshuka from @MaddieDayAuthor plus #Giveaway

It is still summer, right? The tomatoes in my garden seem to think so! My alter-ego's newest Quaker Midwife Mystery, Taken Too Soon, takes place at exactly this time of year on Cape Cod in 1889. I'm not sure if they ever heard of Shakshuka, which is eaten for breakfast in Israel. But after my son and his wife made it for a vegetarian dinner, I wanted to give it a try.

Shakshuka



Ingredients:

2 tablespoons olive oil

1 large chopped onion, 

1 green bell pepper

2 minced garlic cloves

1 teaspoon cumin

1/2 teaspoon paprika

Salt and pepper to taste

5 cups chopped ripe tomatoes

4 large eggs (raw)

2 tablespoons fresh basil, chopped

Feta cheese

Directions

Heat oil in a large heavy skillet or pan. Add chopped onions and bell peppers and saute until tender, at least five minutes.


Add the garlic and saute for not more than a minute. Add the seasonings and tomatoes and cook covered for about 15 minutes, then uncover and cook until the shakshuka sauce has thickened.

Using the back of a wooden spoon make four evenly spaced indentations in the sauce. Crack the eggs and add one in each indentation.


Lower the head to medium-low, cover the skillet, and allow the eggs to cook briefly until the whites are settled (shakshuka eggs are supposed to be runny, but if you like your eggs hard, you can let them cook a bit longer).

Sprinkle with chopped basil and crumbled feta (if you want - I forgot the feta).


Serve hot with fresh bread and a glass of wine.

  1. Not a big breakfast person early in the morning. We often eat "breakfast" food for supper. I love omelets switching it up on which ingredients I use. Cheese is always a must. Our garden is still growing by leaps and bounds so tomatoes are something we use a lot of. Have to enjoy them while we can get them fresh one with taste and flavor.

    The recipe for Shakshuka sounds wonderful. Exactly the kind of dish that would be great for us when we have our dear friends visiting. I'm sure they would enjoy trying this new recipe out as well.

  3. Welcome today. No I have never had this. Thanks for the recipe and tips and will be giving this a try. My favorite egg dish is an egg bake that I make with meat and veggies. Then adding homemade salsa on top. I love to put cucumbers in my salsa. Gives it a neat twist. Recently I added peaches to this and oh my goodness, so yummy.

  8. Simple and tasty. Tomatoes are good with everything, whenever, however. Spanish tortilla (really just a frittata) is my favorite egg dish. Learned to make it while in Spain for hubby AF tour. We love it plain egg and potato or with whatever is available.

  15. I love breakfast foods...most all breakfast foods. I hate cooking it or cleaning up after it’s been cooked though. My ideal breakfast is at a small mom and pops diner. I usually order one one everything...egg, toast, French toast, pancake, home fries, hash, sausage, bacon, ham, omelet. Ah now I’m hungry.

  18. I've never had Shakshuka, but that looks good and the recipe yummy! My favorite egg dish besides Egg Custard Pie, is scrambled eggs cooked with chopped sauteed green onions and cheese melted in. SO good!
