MADDIE here, with a yummy easy summer recipe.
Shakshuka
Ingredients:
2 tablespoons olive oil
1 large chopped onion,
1 green bell pepper
2 minced garlic cloves
1 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper to taste
5 cups chopped ripe tomatoes
4 large eggs (raw)
2 tablespoons fresh basil, chopped
Feta cheese
Directions
Heat oil in a large heavy skillet or pan. Add chopped onions and bell peppers and saute until tender, at least five minutes.
Add the garlic and saute for not more than a minute. Add the seasonings and tomatoes and cook covered for about 15 minutes, then uncover and cook until the shakshuka sauce has thickened.
Using
the back of a wooden spoon make four evenly spaced indentations in the sauce. Crack the eggs and add one in each indentation.
Lower the head to medium-low, cover the skillet, and allow the eggs to cook briefly until the whites are settled (shakshuka eggs are supposed to be runny, but if you like your eggs hard, you can let them cook a bit longer).
Sprinkle with chopped basil and crumbled feta (if you want - I forgot the feta).
Serve hot with fresh bread and a glass of wine.
Readers: What's your favorite egg dish? Have you ever had Shakshuka? I'll send one commenter a signed copy of Candy Slain Murder!
My most recent book is my alter-ego's Taken Too Soon, the sixth Quaker Midwife (written by Edith Maxwell)!
In this book, midwife Rose Carroll travels to Cape Cod with her freshly minted husband on a modest honeymoon - which turns into an investigation into the murder of her aunt's ward.
Following on its coattails is Candy Slain Murder, the eighth Country Store mystery - up for preorder now! You guessed it, the story takes place at Christmas, with Robbie Jordan back in South Lick, Indiana. She digs into the mysterious skeleton of a woman who went missing a decade earlier, and then the woman's twin's murder nearly right in front of Robbie's eyes.
Isn't that a fun cover! You'll be hearing more here about the recipes in the back.
I hope you'll visit Edith Maxwell and me on our web site, sign up for our monthly newsletter, visit us on social media, and check our all our books and short stories.
Not a big breakfast person early in the morning. We often eat "breakfast" food for supper. I love omelets switching it up on which ingredients I use. Cheese is always a must. Our garden is still growing by leaps and bounds so tomatoes are something we use a lot of. Have to enjoy them while we can get them fresh one with taste and flavor.
ReplyDeleteThe recipe for Shakshuka sounds wonderful. Exactly the kind of dish that would be great for us when we have our dear friends visiting. I'm sure they would enjoy trying this new recipe out as well.
Would LOVE the opportunity to read "Candy Slain Murder". Always enjoy your books! Thank you for the chance to win a copy.

Welcome today. No I have never had this. Thanks for the recipe and tips and will be giving this a try. My favorite egg dish is an egg bake that I make with meat and veggies. Then adding homemade salsa on top. I love to put cucumbers in my salsa. Gives it a neat twist. Recently I added peaches to this and oh my goodness, so yummy.
ReplyDeleteI love this cover. Congrats. I would love to read one of your books.

ReplyDeleteSimple and tasty. Tomatoes are good with everything, whenever, however. Spanish tortilla (really just a frittata) is my favorite egg dish. Learned to make it while in Spain for hubby AF tour. We love it plain egg and potato or with whatever is available.

I don't eat eggs, I've never liked eggs and would pretend to be asleep when my Dad made Sunday breakfast because I couldn't stand the smell of eggs.

I love breakfast foods...most all breakfast foods. I hate cooking it or cleaning up after it’s been cooked though. My ideal breakfast is at a small mom and pops diner. I usually order one one everything...egg, toast, French toast, pancake, home fries, hash, sausage, bacon, ham, omelet. Ah now I’m hungry.

ReplyDeleteI'm not a breakfast person, but I like eggs for brunch/lunch or dinner. My faves include omelets, frittatas, migas, quiche, poached and deviled. Yes, I've made Shakshuka and it's similar to the Italian dish Eggs in Purgatory, very tasty! Congrats on the book! lola777_22 at hotmail dot com

ReplyDeleteThis looks like a version of this recipe I could enjoy (minus the peppers). They are often rather overly spiced I think. This looks just right.
