Lime Chicken Recipe by Maya Corrigan and #GIVEAWAY

Today I'm sharing an easy chicken recipe that you can make either gluten-free or not. Topping with bread crumbs before baking will give you crunchy chicken with gluten. If you're going to serve the chicken cold, the gluten-free version would work better.

The photo here shows a platter of lime chicken that book club members served the day I visited the club to talk about my Five-Ingredient Mysteries.

Though this chicken dish doesn’t take long to cook, you need to think ahead. It marinates in a yogurt mix for two hours before it goes into the oven.

Serves 3-4  (It's easy to double or triple the recipe for a crowd.)

Ingredients

6-8 chicken tenders or 2 boneless skinless chicken breast halves, cut length-wise into quarters
1/4 cup plain low-fat Greek yogurt
1 tablespoon Dijon mustard
1 tablespoon of key lime (or other lime) juice, bottled or freshly squeezed
1/4 teaspoon salt

Optional: 1 tablespoon lime zest
Optional: ½ cup of coarse bread crumbs (or herb-seasoned stuffing)

Ingredients for gluten-free lime chicken tenders

Preheat the oven to 400 degrees (after the chicken has marinated).

Combine the yogurt, the lime juice, mustard, salt, and zest if you are using it. Marinate the chicken in the mix, covered in the refrigerator, for two hours.

Lift the chicken from the yogurt mix and let any excess marinade drip off. Sprinkle the crumbs on top and press them in if they aren't sticking.

Place the chicken on a baking sheet and bake it for 10 to 12 minutes.

The 7th book in the series, Gingerdead Man, comes out September 29, 2020, and is available now for pre-order from Amazon and Barnes and Noble.

This holiday season Bayport, Maryland, is a dead ringer for Victorian London. Val and her grandfather are taking part in the Dickens of a Holiday festival. Val is hosting a private tea party serving the festival's costumed volunteers, who range from Dickens divas like Madame Defarge and Miss Havisham to Ebenezer Scrooge and old St. Nick himself. But one costumed reveler may have gotten the holidays mixed up. The winner of the creepiest outfit, robed in black with a gift bag covering the head hands out gingerbread men with white icing skeleton bones. This year's sour Santa has none of the big fellow's mirth but plenty of his appetite, and it's no secret Santa loves cookies. But when the man in red turns blue, Val and Granddad have a cookie-cutter killer to catch before the New Year . . .

  1. I'll start the ball rolling by saying that, while I like the lime chicken recipe I posted because it takes almost no time at all, I really enjoy stir-fried chicken with vegetables if I have enough time to make the sauce and cut up the veggies and chicken.

  6. To name one is hard. I have two go too chicken recipes. One is from my maternal grandma. Her fried chicken is so tasty. and Juicy. The other is from my paternal grandma. Sweet & sour chicken served with savory fried rice. Really looking forward to this. So hoping. bessdeepotter84 at gmail dot com

  7. Tried something new last night. I cut up boneless breasts ( not tiny pieces, maybe 1X2")and breaded them with crushed Annie's Cheddar crackers. Just the damp chicken and the crumbs, although I'd thought about the possibility of a thin layer of mustard on the chicken before putting on the crumbs, but I got lazy!
    It was a hit with ages 3 1/2, 30, and 71!

  11. My sister made a casserole with chicken, noodles, cheese, Alfredo sauce, and ranch dressing. Being a fan of neither Alfredo or ranch, I was leery. And pleasantly surprised at how much I enjoyed it.

  18. It's not really a recipe, but one of my favorite things to do with chicken is make a bunch in the instant pot to use in chicken salad. I use various means of chicken salad each time - sometimes more traditional, sometimes more exotic. Your recipe sounds yummy!
