Though this chicken dish doesn’t take long to cook, you need to think ahead. It marinates in a yogurt mix for two hours before it goes into the oven.

Serves 3-4 (It's easy to double or triple the recipe for a crowd.)
Ingredients
6-8 chicken tenders or 2 boneless skinless chicken breast halves, cut length-wise into quarters1/4 cup plain low-fat Greek yogurt
1 tablespoon Dijon mustard
1 tablespoon of key lime (or other lime) juice, bottled or freshly squeezed
1/4 teaspoon salt
Optional: 1 tablespoon lime zest
Optional: ½ cup of coarse bread crumbs (or herb-seasoned stuffing)

Preheat the oven to 400 degrees (after the chicken has marinated).
Combine the yogurt, the lime juice, mustard, salt, and zest if you are using it. Marinate the chicken in the mix, covered in the refrigerator, for two hours.
Lift the chicken from the yogurt mix and let any excess marinade drip off. Sprinkle the crumbs on top and press them in if they aren't sticking.
Place the chicken on a baking sheet and bake it for 10 to 12 minutes.

I'll start the ball rolling by saying that, while I like the lime chicken recipe I posted because it takes almost no time at all, I really enjoy stir-fried chicken with vegetables if I have enough time to make the sauce and cut up the veggies and chicken.

ReplyDeleteTried something new last night. I cut up boneless breasts ( not tiny pieces, maybe 1X2")and breaded them with crushed Annie's Cheddar crackers. Just the damp chicken and the crumbs, although I'd thought about the possibility of a thin layer of mustard on the chicken before putting on the crumbs, but I got lazy!

ReplyDeleteMy sister made a casserole with chicken, noodles, cheese, Alfredo sauce, and ranch dressing. Being a fan of neither Alfredo or ranch, I was leery. And pleasantly surprised at how much I enjoyed it.

ReplyDeleteIt's not really a recipe, but one of my favorite things to do with chicken is make a bunch in the instant pot to use in chicken salad. I use various means of chicken salad each time - sometimes more traditional, sometimes more exotic. Your recipe sounds yummy!
