Banana Cottage Cheese Coffee Cake #recipe, gluten-free from author @DarylWoodGerber

What's the book about?

Fairy garden store owner Courtney Kelly believes in inviting magic into one’s life. But when uninvited trouble enters her shop, she’ll need more than a sprinkling of her imagination to solve a murder . . .

Since childhood, Courtney has loved fairies. After her mother died when she was ten, she lost touch with that feeling of magic. A year ago, at age twenty-nine, she rediscovered it when she left her father's landscaping business to spread her wings and start a fairy garden business and teashop in beautiful Carmel, California. At Open Your Imagination, she teaches garden design and sells everything from fairy figurines to tinkling wind chimes and trickling fountains. Now she's starting a book club tea.

But the light of the magical world she's created inside her shop is darkened one night when she discovers neighboring dog-grooming business owner Mick Watkins dead beside a fountain. To make matters worse, the police suspect Courtney of the crime. To clear her name and find the real killer, Courtney will have to wing it. But she’s about to get a little help from an unexpected new friend . . .

On weekends at Open Your Imagination, Courtney serves tea on the outdoor patio. This little coffee cake might be something she would serve. I will be sharing recipes from the book come July, so stay tuned.

Banana Brown Sugar Coffee Cake
 (Gluten-free Version)


2/3 cup butter, melted
1 cup white sugar
1 teaspoon vanilla
2 eggs, large
1 cup cottage cheese
1 teaspoon cider vinegar
2 cups gluten-free flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon xanthan gum
1 tablespoon whey powder


1/2 cup brown sugar
2 bananas, peeled and sliced
1 teaspoon cinnamon


1/4 cup brown sugar
1 teaspoon cinnamon

Preheat oven to 350 degrees.

Grease a 9 x 9 pan or line with parchment paper.

For the cake batter:  In a large bowl, mix melted butter and sugar and vanilla. Add eggs and beat on low.  Still beating on low, add cottage cheese and vinegar.   

Then add the gluten-free flour, baking powder, baking soda, salt, xanthan gum, and whey powder, and blend until thoroughly mixed.

For the filling: In a small bowl, mix the bananas, brown sugar, and cinnamon.

Spoon half of the batter into prepared pan. Pat down with your fingers. This is the fun part – like working with play dough. Layer all of the filling on top of that.  Spread the rest of the batter over the filling. Again, pat down with your fingers.

Mix the topping ingredients and sprinkle topping over the coffee cake.

Bake for 30-35 minutes, until nicely browned. 

Let cool for 20 minutes and remove from the pan. Serve warm or room temperature.

*If you want to make this using regular flour, simply substitute the flour, and omit the xanthan gum and whey powder.
