#Baked BBQ Baby Back Ribs by Denise Swanson

Although, my husband and I love to cook, we do not have a grill. We had one once a long time ago, but when it rusted out we decided not to replace it. We used it so infrequently that it was more trouble than it was worth to move it onto the deck and then back into the garage.

Without a grill, we stopped making BBQ ribs so whenever we had a hankering for their messy deliciousness we went out to eat. With the quarantine going out to  a restaurant was off the table and living in the middle of rural Illinois there is no delivery and takeout means a long trip.

All of this lead to finding a recipe for ribs that didn't require a grill. This one turned out to be amazing!


  1. Ingredients

    • 1/4 cup chili powder
    • 1/8 cup white sugar
    • 1/8 cup brown sugar
    • 1/8 cup salt
    • 1 tablespoons black pepper
    • 1 1/2 teaspoon ground cumin
     
    • 1/2 teaspoon dry mustard
    • 1/2 teaspoon ground cayenne pepper
    • 1/4 teaspoon ground chipotle pepper
    • 1 rack baby back pork ribs



    1. Preheat oven to 250 degrees F 

    1. Mix  chile powder, white sugar, brown sugar, salt, black pepper, cumin, dry mustard, cayenne pepper, and chipotle pepper in a small bowl until combined.










    2. Place ribs meat-side down on aluminum foil. Prick back of rib rack several times with a knife.

    3. Generously apply coating of dry rub to all sides of rib rack.


    1. With rib rack meat-side down, fold foil around it to create a tight seal. Transfer to sheet pan.


    1. Bake in preheated oven until tender and cooked through, about 2 hours. Remove and cool 15 minutes.

While ribs cook, increase oven temperature to 350 degrees F and make BBQ sauce

    1. 1/2 cup ketchup

      • 2 tablespoons brown sugar
      • 2 tablespoons Worcestershire sauce
      • 1 tablespoon cider vinegar
       
      • 1 dash hot pepper sauce
      • 1 teaspoon garlic powder
      • 1/4 teaspoon mustard powder
      • 1/4 teaspoon salt









    1. In a small saucepan over medium heat, stir together the ketchup, brown sugar, Worcestershire sauce, vinegar, hot pepper sauce, garlic powder, mustard powder, and salt. Bring to a simmer, then remove from heat and allow to cool slightly before brushing on ribs.

Open foil, drain and discard any accumulated juices and fat. Brush barbecue sauce on all sides of rack.


Place rack meat-side up and return to oven, leaving foil open. Bake for 10 minutes, remove from oven, and brush another layer of barbecue sauce on meat-side only. Repeat baking and brushing with sauce 4 more times, for a total of 50 minutes baking time.

  1. See, you don't need a grill for yummy ribs.
    A dry rub and a sauce--that doesn't overwhelm the meat flavor?
    You only put the sauce on the meaty side, not the rib side? Why?

  2. It is an intense flavor, but that's our preferences. The recipe only indicated the sauce for the meaty side and I never thought of putting the sauce on the rib side.
