Broccoli Cheddar Casserole from author @DarylWoodGerber

Okay, how are you doing? Still inside? Wondering when you're getting out? Are you at least taking walks? I sure hope so. It's important to keep active during a time of crisis. It's important to think positively and plan for the future. Have dreams. Hopes. Desires. And when in doubt . . . read.  It will help you dream and desire.

You're probably hungry, too.  What do you have in the house?

Here's a tasty side dish that is so easy to make. You can make it with frozen vegetables if that's all you have . And you can substitute the broccoli with cauliflower, if desired. What makes it so tasty is the crusty panko that you sprinkle on top.  Hopefully you keep that in your pantry. I do. I add it to lots of dishes: meatloaf, casseroles, meatballs.  You can purchase it online. I get the gluten-free kind, which is a rice-based panko. Yum.

Enjoy.

Broccoli Cheddar Side Dish

(serves 4-6)

2 cups broccoli
1 egg
1/4 cup mayonnaise
1/4 cup chopped yellow onion
1 cup shredded Cheddar cheese
1/4 cup butter, melted
1/2 - 1 cup panko, as desired

Cut up broccoli and cook in boiling water for 2 minutes. Remove from heat, pour off water, and cool with an ice bath.

Preheat oven to 350 degrees F.

Pour the broccoli into an 8 x 8 baking dish.

In a medium bowl, beat eggs until creamy. Add in mayonnaise, onion, Cheddar cheese and melted butter.  Pour over the vegetables.  Sprinkle with panko.

Bake in preheated oven for 20-25 minutes until browned and cheese melted through.  Serve hot.

  1. Thanks for sharing, this looks really yummy. It looks like if you didn't have broccoli and had cauliflower or asparagus that you could use one of the others instead. I'm anticipating the release of shredding the evidence.
