Around the Kitchen Table: Recipes from our Pantry + book #giveaway




LUCY BURDETTE: We were going to write about dieting tips today, but yikes! We need to eat right now to stay healthy and face the anxious times ahead of us. We wondered what we have to offer our readers and came up with two things. Cozy mysteries, of course, because comfort reads can whisk us away from a difficult time. And easy recipes that might use what you already have in your pantry or fridge. Most people probably have a bag of carrots in their vegetable bin, right? My glazed carrots are so easy, I hesitate to call this a recipe!

MADDIE DAY: Good call, Lucy. When life is stressful, who needs a diet? What you might need - I mean, want - is chocolate chocolate chip muffins. I always have flour, oil, eggs, milk, and cocoa around, and pretty much always have chocolate chips around, too. These muffins are as easy as they come. The Cinnamon, Sugar, and a Little Bit of Murder blog presented the recipe last summer after it appeared in Strangled Eggs and Ham (their picture).

Daryl Wood Gerber:  It's definitely stressful, so I've made another chocolate banana coffee cake, which I shared a couple of weeks ago, some protein bites, and a batch of macaroons. I always have baking items in the pantry.  And the macaroons don't require eggs -- just in case those become short on supply.
Plus, I've bought lots of bananas that have definitely aged, so they need to be cooked. PS  You can always freeze bananas and use them in a recipe later on. Great in protein shakes, by the way.

LESLIE: A few Januaries ago, we did a week or two of posts on the theme of "A Clean Sweep," cleaning out our fridges and freezers after the annual holiday splurges, and some of those posts might be helpful now. Mine -- Spiced Roasted Chickpeas and Other Surprises -- included those yummy chickpeas, making croutons, and tips for using up bits of cheese and the last lonely teaspoon of jam. Find my blog sisters' posts by using the older and newer post buttons at the bottom of mine. 

If it's still cool where you are, I'm guessing you'll warm up to this easy Vegetarian Chili and Green Chile Cornbread, using pantry staples and a few fresh vegetables that are easily changed, depending on what you have. Or maybe you'd rather pair your chili with these Pumpkin Spice Drop Scones, using canned pumpkin -- you can change the spices based on what you have. With all these recipes, the leftovers are easily freezed, a real plus these days.

My mom's recipes are generally both comforting and use ingredients most people have in their pantries. Last month I posted her Five Cup salad recipe. 
It's basically 1 cup of mandarin oranges, 1 cup of pineapple chunks, 1 cup of coconut, 1 cup of marshmallows, and 1 cup of sour cream all dumped in a bowl and stirred together. It's a great side dish or even can be used for a light dessert.

PEG: Almost everyone has pasta in their cupboard, right? It keeps forever and can be used in so many ways--as is, added to soups or stews, turned into a salad, etc.  But you do need something to put on it.  You can stock up on jarred sauces--that's easy enough and those will keep as well--but it's so easy to make your own simple tomato sauce like this recipe here.  Chances are, you may not have fresh basil on hand at the moment, but the sauce will be delicious anyway.  If you have flour, water, yeast and some cheese, you can top a pizza with it for something different!  And if you want something for dessert but don't want to use your supply of milk, eggs or butter, there's always Depression Cake, which doesn't require any!

VICKI: This is most definitely NOT the time to be dieting. You don't want to let go and have twenty pounds to lose when you come out of isolation either. Just eat sensibly, try to get what exercise you can, and hang in there. Having said that, I find baking to be a huge relaxation. I'm making cookies to pop in the freezer, and I have everything at hand in the cupboard. Hopefully we'll have friends dropping in again soon. Here's my recipe for Molasses Spice Cookies. I usually make these at Christmas, but we need some festivity in our lives right now, don't we? 



KRISTA: Of course, the big problem is running out of little things. I love fluffy American pancakes, but Oma's German Pancakes are definitely easier and only require eggs, flour, milk, and oil. Eat them with thawed or cooked frozen fruit. 



But first I'm going to make more of these chocolate chip cookies. I posted this recipe recently. They come out very flat, but oh my, are they delicious!

Here's the really bad news. They're just as delicious frozen. Store them in a freezer bag with wax paper between the layers. When you want to eat them, take out as many as you want and let them come to room temperature on the counter, which takes about half an hour. Yum!

MAYAIt's hard to beat cookies and chocolate for comfort food. I recently posted a couple of easy and delicious cookie recipes. Grasmere gingerbread is a bar cookie. You don't have to roll out the dough. You just pat it down in the pan. I've frozen these cookies the way Krista recommends, and they've turned out great, ready to eat after 10 minutes out of the freezer.

  6. Wow! All of these recipes sound delicious! I recently made a banana choc chip bread. Especially now, we're doing our best not to waste any food. I had one, large very ripe banana. With my recipe, I need at least two. So I got creative and used a very ripe pear that I removed the skin and mashed up. It worked great! Thanks for being here for us and thanks for the chance!   9. Yum! I have two kids and a husband that are picky eaters. One meal they all agree is a basic chicken noodle soup. Frozen chicken breasts I cook in the instant pot, egg noodles, cream of chicken soup and chicken broth, salt a pepper afterwards to taste. Served with yeast rolls. It makes them all happy.   10. Although it might look as if not easy, my favorite muffin recipe is very easy and has all those yummy good for you things – like protein, veggies, eggs, and dairy. It’s a throw together, spoon in the pan, bake kind of deliciousness too. I call it my leftover muffins because I usually make it when I have little dabs of the ingredients on hand leftover from other dishes.

    Here’s my recipe:
    All In One Breakfast Muffin
    1 ¾ cup flour
    1 cup 3 minute oats
    ¼ cup sugar
    1 tsp. baking powder
    ¼ tsp salt
    1 egg, slightly beaten
    1 cup milk
    1/3 cup oil
    ½ pound bacon, cooked crisp and crumbled
    ½ cup shredded cheddar cheese
    1/3 cup onion - finely chopped
    1/3 cup bell pepper – finely chopped
    In bowl combine the dry ingredients (first 5) and set aside. Mix milk, egg and oil.
    Pour wet ingredients into the dry ingredients all at once. Stir only until moistened.
    Stir in bacon, cheese, onion and bell pepper.
    Fill greased muffin pan 2/3 full.
    Bake at 375 degrees for 15-18 minutes
    Makes 1 dozen muffins

  18. Thanks for the recipes. They sound yummy. When I was a little girl back in the '60's my mom made Salmon Loaf. A can of salmon (drained), a slice or two of bread crumbled up to make 1 cup, 2 eggs, a teaspoon of salt and about a half cup of milk. Mix it all up and bake at 350 for 30 or 35 minutes uncovered.     My Go-To Quarantine Recipe
    Fill a coffee maker with fresh water
    Measure out coffee beans into a grinder
    Grind beans
    Fill filter of coffee maker with ground beans
    Turn on coffee maker
    When the brew is ready, pour into a mug
    Add something creamy, like coconut creamer
    Relax and enjoy!

  23. Chili is my go to comfort food... but one quick recipe I have is:
    1 can cream of celery, 1 can cream of chicken, 1 cup minute rice. Mix together and put in a greased baking dish. Add chicken breasts on top with butter & parmesan. Cook 375 for 45 min ish.

  47. All these recipes look delicious. My daughter wanted Alfredo sauce the other night and we didn’t have any heavy cream. We found a recipe on line to use cream cheese instead which we had by luck! It was so delicious. It has been kind of wonderful having her home from college because we are cooking together everyday. Don’t get me wrong she is upset to miss her senior year at college and playing softball and bowling, but I have told her so many other wonderful things we can make memories doing!   62. I make my grandmother’s homemade macaroni and cheese. It’s so easy. One pound of cooked pasta. You layer crushed tomatoes Colby jack cheese and pasta till you get to the top of your casserole dish. Then cheese all over the top. Half hour in the oven.

  70. One of my favorite cozy is one with recipes. I love to find new one to try out. I also love to buy and read cookbooks. I guess I'm slightly obsessed with new recipes and trying new foods.
    I love to cook and bake and my family's favorite for me to make is Chocolate Chip Banana Bread. It's a great quick recipe and you can freeze the loaves to always have some on hand when you need a snack or to take to a cookout or party.

    2 1/2 cups all purpose flour
    2 tsp baking soda
    1/4 tsp salt
    1 cup canola oil
    2 cups sugar
    4 eggs
    2 cups mashed bananas (you want them to be spotted for sweetness)
    1 tsp vanilla
    1 bag of Ghirardelli semi-sweet mini chocolate chips (put them in a small ziploc bag with a tiny amount of the four mixture to coat them. It will stop them from all sinking to the bottom of the pans)

    Preheat oven 350 F

    Line 2 loaf pans with greased parchment paper

    Combine four, baking soda, salt
    Large bowl: beat oil and sugar. Add eggs one at a time, add bananas and vanilla. Add flour and then stir in chocolate chips.
    Divide into the 2 pans and bake for about 1 hour depending on your oven. Let cool and then enjoy.
    This is our favorite and I hope you like it too.

  74. My mom just informed me you can pineapple anything just by substituting pineapple juice instead of water in the cake mix. My 8-year-old is so excited now. Pineapple upside down cake is his favorite, so today we're making pineapple right-side-up muffins!

  77. My go to pantry meal is dressed up ramen. Toppings are usually placed over top. Can add whatever sliced cooked meat you have (or tuna), whatever cooked veg you have or raw and shredded (cooked leafy greens, shredded carrot, shredded or sliced radish, match stick cut cucumbers, tomatoes cut however), peanuts, diced onion (prefer red) or sliced green onion, and egg poached in the ramen broth. I usually drizzle chili oil or sriracha over top.

My favorite show is "Chopped" and we really struggle financially anyway, so I feel like very day is chopped at our house to put healthy meals on the table, especially since we have food allergies at our house.   92. Thank you for sharing these delicious recipes. One of my favorite comfort foods is Bread Pudding. My mother and grandmother made this and I now carry on their tradition. This is a good way to use up extra bread that may be getting stale but during this time, you may not have much bread on hand. I really like using biscuits in mine.

    Bread Pudding
    Ingredients:
    1 pint milk
    2 c. bread cubes (can use homemade biscuit cubes)
    1/4 tsp. salt
    1/2 c. sugar
    2 tbsp. butter (or margarine)
    1/4 tsp. cinnamon
    1/2 tsp. vanilla
    3 eggs

    Glaze:
    3 tbsp. flour
    1/2 c. sugar
    1 1/2 c. cold water
    2 tbsp.
    1 tsp. vanilla
    1 tsp. cinnamon (some prefer nutmeg)

    Add the bread crumbs, sugar, salt, melted butter, milk, eggs, cinnamon, and vanilla together. Mix well and place in a 9 x 9 baking dish. Bake at 350 degrees for 40 minutes. To make the glaze: mix all glaze ingredients together; bring to a boil and stir until it thickens. Pour the glaze over the bread pudding.

  94. One we had a lot when I was a kid was noodles and either hamburger and cream of mushroom soup, or tuna and cream of celery. Crush some potato chips over top for a little crunch and you've got an easy casserole.
    Still have to go to work every day so not much chance to cook, but I'll be trying some of these my next day off.

  96. I try to keep at least two cartons of eggs on hand. My husband loves egg salad; so, that's an easy fix. I will fry eggs sunny side up to put on top of a leftover dish from the night before. I've put homemade cookies in the freezer, hoping it lasts a long time. Nope. It doesn't work. They do taste good cold.   101. Cooking cozi always make me hungry! Leftover roasted chicken from grocery or Sam's. Mix one can cream of mushroom soup, 1/2 cup of sour cream in a casserole dish and third cup OJ to thin. Remove skin and cut chicken into thick strips and lay on sauce. You can spoon sauce over chicken so it is covered. Cover casserole dish and cook 45 mins to 1 hour at 350. Serve with salad and wild rice ( Uncle Ben's microwave goes well and is easy) or use favorite rice. One of our favorites.

  102. A box of chicken stock, a small onion, diced, a can of diced tomatoes, a bag of frozen tortellini and some Italian seasoning and garlic thrown together in a pot makes an easy soup. I add in some spinach or baby kale if I have any.

  104. I am so excited about these recipes because I have the ingredients here in my house already! For the last few months, I've been experimenting with new recipes a day or two a week but it usually means running out to the store to pick up this or that. I can't do that right now so it's nice to see these are made with household staples. Some of the things we stocked up on were eggs, flour tortillas, and shredded cheese. We can make breakfast burritos, quesadillas, wraps, whatever. Plus the tortillas stay fresh a lot longer than sandwich bread. Like everyone else, I'm looking for things that are versatile and longer lasting right now.   114. I've been doing my best to make a variety of flavors with the same ingredients, perhaps just changing the vegetables. Last night I used garam masala with chicken and rice, but I have other spice blends like garlic/lime/cilantro, Moroccan spice, Italian spice with or without tomato sauce,thyme/bayleaf/broth, taco seasoning. Tonight I am blending plain yogurt with Dijon mustard over chicken, rjce, and carrots. I haven't exhausted my spice and herb arsenal yet! mhunter972@aol.com

  124. thank you all ladies for these wonderful recipes. My sister shared with me recently a side dish. I love it. And it freezes so well.
    oven 350
    9x13 pan greased
    three bags frozen Brussels sprouts
    1/2 cup butter
    salt, pepper
    cried onions
    bacon, 1 package
    fresh grated Parmesan
    grease pan. dump Brussels sprouts in. melt butter and pour over top and mix in. sprinkle salt and pepper and however much dried onions you like. cut bacon in approx 1 inch pieces and put on top. cook for 30 to 40 minutes. pull out. sprinkle generously with fresh parmesan. bake another 10 minutes. Note: if bacon is not crispy when you first pull out, pull all the bacon out and fry it and put them back on. then sprinkle with cheese. You want the bacon taste in the sprouts.

  127. Such great sounding recipes! My clean out the pantry/ fridge favorite is goulash. The whole family loves it. I always make a large batch and freeze single servings for quick lunches. Cook a few handfuls of elbow macaroni in boiling water. Drain. Dice a couple of bell pepper and a couple of onions and cook in a little oil. Add a couple of pounds of ground beef, cook until browned. Drain well. Add 1 can of whole kernel corn, 2 cans of diced tomatoes, and cooked macaroni and heat thoroughly. Renee. Mickeymania1@aol.com

Toss together a combination of canned beans with balsamic vinegar or any kind of vinegar add chopped onion or croutons...whatever you have on hand in the pantry will usually work.   143. All these recipes sound good! I've been using the Instant Pot even more than usual and cooking a lot from the freezer. Three meals I've made in the past week using the IP were Cheesy Chicken Pasta, White Beans w/Pecan Smoked Andouille sausage, & yesterday I chunked up a pork shoulder, IP'd & shredded the meat to go into homemade Spaghetti Sauce.
    Tonight will probably be salmon patties with smothered potaties & onions, and carrot salad. Running out of fruit & fresh veggies, so that's on the list for grocery pickup ASAP! Stay safe, everyone.

  148. Very good recipes to try. I have a very easy recipe that is also low carb. 2 cups heavy cream and 1 package sugar free pudding mix. I like to use pistachio sugar free, or cheesecake sugar free pudding. Blend together until frosting like consistency. Enjoy! Thank you for the chance!
