Salmon and grilled vegetables #recipe + book #giveaway from author @DarylWoodGerber

From daryl:

I am sad to say as of April 1, we bid adieu to our lovely Ellie Alexander as a regular on the blog. As you all know, this can be a very stressful time for all, but with young ones in the family and homeschooling and book deadlines, it can just be too much.  To send Ellie out with a bang, I'm offering a book giveaway today to lure you to leave a comment and wish her well on her new journey.   Don't miss her upcoming release, coming June 30...

Book giveway below!

We will be adding a new member to the family in April. Keep your eyes peeled.

*

In other news, I have a new book coming out in 4 weeks.
The 9th in the Cookbook Nook Mysteries.
This is the cover reveal day!  Yay!

Available at AMAZON, BARNES AND NOBLE, KOBO, GOOGLE PLAY.

And for libraries, it's available on SMASHWORDS

You can read more about it on my website, and get into the
world of the Cookbook Nook Mysteries,
watch the book trailer, and more HERE

What's it about?

The denizens of Crystal Cove are salivating over the upcoming Food Bowl Week, when local chefs offer some of their best and most imaginative creations in bite-size portions all over town. Bookstore proprietor Jenna Hart is hungry to sample as many of the delicacies as she can, but when she stumbles onto the dead body of a local food reporter and learns that her best friend’s husband is the primary suspect, she’ll have to summon the appetite for a side dish of sleuthing to prove his innocence.

Jenna knows the ambitious and aggressive reporter, who was strangled at a fitness center with her shredded restaurant reviews scattered around her, left behind a long list of potential suspects. As she begins piecing together the scant clues, she uncovers illicit ties between the victim and a local newspaper owner, a spurned would-be lover, and a host of disgruntled restaurant owners not a bit torn up by the critical reporter’s demise. And with a solution so close she can almost taste it, Jenna turns up the heat on the culprit, realizing too late that she’s the next course on the murderer’s menu . . .

But now, let's talk about for food for you!

How are you doing during this stressful time? Reading? Baking? Walking more than you used to?

Are you trying to figure out what to make using whatever you have in the freezer? I like to keep fish in the freezer at all time so I can eat "healthy" once in a while.

I had a number of vegetables in the refrigerator and thought a quickie meal would be perfect for dinner. EASY and FLAVOR are the name of the game when I'm feeling stressed. How about you?

Don't get me wrong. During the day, I'm eating plenty of sugary things that are bad for me, but at night, I really try to treat my body right!

Enjoy this simple but elegant meal.

Salmon and a variety of vegetables

(for 2)

2 portions salmon, skin off
1 tablespoon olive oil

For vegetables

1 turnip, peeled and diced
1 roma tomato, diced
1 zucchini, sliced thin
10-20 snow peas, chopped
1 tablespoon Italian parsley, diced
1 tablespoon chives, diced
1 tablespoon olive oil
1 tablespoon butter
salt and pepper to taste
white wine, if desired

Cook salmon as desired. I like to brush with olive oil and broil in a hot oven, 3-4 minutes a side.

Prepare vegetables and herbs.

In a saucepan, melt the olive oil and butter.  When it’s sizzling, stir in the vegetables. Reduce heat to simmer. Cook for about 3-4 minutes. Remove pan from heat and toss in the herbs and seasonings. Set on plate and top with salmon. If desired, add a tablespoon of white wine to the olive oil and butter.

  1. Firstly I love your salmon dish since salmon is my favorite fish and a staple in our home. I prepare it with roasted veggies and kale. I eat fish at least 3 times a week and because it is so easy to prepare and healthy everyone enjoys this meal. Now with the big changes I take care of my 6 and 8 year old grandsons daily from 8-5. Busy and a rare time for us to be together doing many activities out in the backyard and inside. Reading is my salvation before bed. saubleb(at)gmail(dot)com

  8. Fantastic cover for the new book and as always a timely, yummy recipe from you, Daryl. And Ellie, we will sure miss you but it's always good to set priorities and know how to balance. I don't know how authors do it anyway and have "real" lives - I'm retired and can barely keep up with reading and some reviews :-). Thanks for the giveaway!

I'm using up as much as I can these days, from the fridge and freezer, with a few new additions when available. Fresh produce has been a bit scarce, but I'm doing the best I can with whatever's available. lola777_22 at hotmail dot com

  28. Ellie, I have TEN grandchildren, all of them home doing distance learning on-line. Thankfully I'm only called in to stay with the youngest of them to make sure they stay on track. My trick is to make sure they are doing the work assigned and watch them from the lounge chair with a drink and a book in my hands.

We always have salmon in the freezer. There are so many ways to prepare it. I personally prefer using an Asian Sauce over it and then bake it in the Toaster Oven. Served with couscous or rice and a veggie.
