Using chocolate chunks, as opposed to chips, makes the chocolate a stronger element in the cookie. High-quality bittersweet, semisweet, or white chocolate chunks will give you the best results. If you like your chocolate chip cookies plump and rich with coconut or other nuts, you might not care for this cookie. The only chocolate I had in the house when I made the recipe was imported from Chile and had almonds in it, so I ended up sneaking another ingredient into the mix. The almonds didn't compete with the the flavor of the bittersweet chocolate but they did add a little crunch.
Ingredients
1 stick (8 tablespoons) softened butter
1 cup packed brown sugar
1 large egg
1 cup + 2 tablespoons flour
6 ounces bittersweet, semisweet, or white chocolate, cut into 1/3 to 1/2-inch chunks
Preheat the oven to 350 degrees.
Beat the softened butter, sugar, and egg with a mixer on medium speed until combined. Beat in the flour.
Stir in the chocolate chunks by hand.
Drop mounds by rounded tablespoons, 2 inches apart, onto ungreased cookie sheets, optionally lined with parchment paper. The cookies will flatten as they bake.
Bake the cookies for 9-10 minutes until golden around the edges. Don't overbake. Let the cookies cool a few minutes on the sheet and then remove them to a rack to cool completely.

DeleteI was a full time homemaker turned homemaker/caregiver for my Mom with Alzheimer before we "retired". Does a homemaker ever retire?? Definitely not complaining because I love my "job". The pay may not be much but the benefits are enormous. Nothing makes me happier than doing for my hubby. Blessed with a hubby who said we are both retired meaning all work is shared or done together. We both love to bake/cook and spending time in the kitchen together is a great joy. Hubby loves cookies better than any other type dessert. His all time favorites are Snickerdoodles (made with lots of cinnamon and sugar), chocolate chips (with no nuts) and my Granny's Old Fashion Tea Cakes (form of sugar cookie that can be soft if rolled out thicker and crisp if rolled thin and sprinkled with sugar on top).

Favorite cookie would be Red Velvet Cookies OR Lemon Bars. Yes, I am cooking at home more - even plan on doing some baking. Since I work in an "essential" business I still get to go to work each day.

My favorite cookie (and my husband's favorite, as well) is Pina Colada Cookie that I make every year for Christmas, and then another few times a year, too. It has crushed pineapple, toasted coconut, white chocolate chips and rum flavored oil, in addition to typical cookie ingredients. We love the flavor and the texture, the fact that they are different than the cookies everyone else makes, and the recipe makes 8-9 dozen cookies, so we have them for quite awhile!
