Chocolate Chunk Cookies Five Ingredients #Recipe by Maya Corrigan #Book Giveaway

Following a stay-home order by my local and state government during the pandemic, I'm doing more baking than usual. Are you spending more time in the kitchen too? I'm already running out of some ingredients, but I still have flour, sugar, butter, eggs, and chocolate. That's all I needed to make these cookies. My sleuth's curmudgeonly grandfather, the Codger Cook, would like this recipe. He took up cooking in his 70's, but won't try anything with more than five ingredients or any recipe that requires a rolling pin.




Using chocolate chunks, as opposed to chips, makes the chocolate a stronger element in the cookie. High-quality bittersweet, semisweet, or white chocolate chunks will give you the best results. If you like your chocolate chip cookies plump and rich with coconut or other nuts, you might not care for this cookie. The only chocolate I had in the house when I made the recipe was imported from Chile and had almonds in it, so I ended up sneaking another ingredient into the mix. The almonds didn't compete with the the flavor of the bittersweet chocolate but they did add a little crunch.




Ingredients

1 stick (8 tablespoons) softened butter
1 cup packed brown sugar
1 large egg
1 cup + 2 tablespoons flour
6 ounces bittersweet, semisweet, or white chocolate, cut into 1/3 to 1/2-inch chunks




Preheat the oven to 350 degrees.

Beat the softened butter, sugar, and egg with a mixer on medium speed until combined. Beat in the flour.
Stir in the chocolate chunks by hand.
Drop mounds by rounded tablespoons, 2 inches apart, onto ungreased cookie sheets, optionally lined with parchment paper. The cookies will flatten as they bake.

Bake the cookies for 9-10 minutes until golden around the edges. Don't overbake. Let the cookies cool a few minutes on the sheet and then remove them to a rack to cool completely.

Makes 20-24 cookies.

  3. As funny as it sounds, my favorite go to cookie would be chocolate chip, but I've never made them from scratch.. I am a break and bake kind of gal. But I think I am going to give these a try. I can't guarantee mine will look anything like yours, but I am going to finally try and do it. (I will let you know how it goes.

  4. I was a full time homemaker turned homemaker/caregiver for my Mom with Alzheimer before we "retired". Does a homemaker ever retire?? Definitely not complaining because I love my "job". The pay may not be much but the benefits are enormous. Nothing makes me happier than doing for my hubby. Blessed with a hubby who said we are both retired meaning all work is shared or done together. We both love to bake/cook and spending time in the kitchen together is a great joy. Hubby loves cookies better than any other type dessert. His all time favorites are Snickerdoodles (made with lots of cinnamon and sugar), chocolate chips (with no nuts) and my Granny's Old Fashion Tea Cakes (form of sugar cookie that can be soft if rolled out thicker and crisp if rolled thin and sprinkled with sugar on top).

  7. With my kids home from school and me home from work, I am cooking a LOT more. My favorite cookies are chocolate chip or peanut butter, but I'm not a baker, so I rarely make cookies at home.   17. At the moment I am staying as much as possible so I don't want to do too much baking and use up ingredients that I may need for an emergency. I'm lucky to have ready made gluten free cookie mix in the freezer and tonight's selection is chocolate chip. Feels like the right choice to go along with the rain.

  27. I am basically a hermit anyway so when they gave a stay at home order it didn't do much for me. I much prefer being home than going out anyway. I need to make an appointment for lab work before my cardiologist in May and other than that, I only have to go to forage for food on occasion.
    As far as cookies...I like oatmeal raisin cookies best.

  31. We mostly cook our meals at home from scratch, so that part hasn't changed much. But being home all the time has led to more baking. My husband made a batch (10 dozen! ) of his favorite cookies, I made a cranberry orange bundt cake, and my favorite biscotti. All this in the last 3 days. I foresee the scale creeping up....

  35. My favorite cookie (and my husband's favorite, as well) is Pina Colada Cookie that I make every year for Christmas, and then another few times a year, too. It has crushed pineapple, toasted coconut, white chocolate chips and rum flavored oil, in addition to typical cookie ingredients. We love the flavor and the texture, the fact that they are different than the cookies everyone else makes, and the recipe makes 8-9 dozen cookies, so we have them for quite awhile!
    Thanks for sharing this recipe. I really love chocolate chip (or chunk) cookies, too, and it's fun to try new recipes for those occasionally, too. Looking forward to making these soon!
