The Big Blueberry Coffee Cake
























It's that time of year again. Post holiday. Every last candy cane and cookie are long gone. And I'm hungry for something sweet. It's time for cake. Now it doesn't have to be fancy. In fact, this is about as simple a cake as you'll ever see. But the best thng about it is that it's equally appropriate for a midnight snack, breakfast, lunch, and dessert after dinner.
 
Even better, it's chock full of frozen blueberries! So it's not completely sinful. I did add a quick and easy drizzle on the top to give it a little boost. I went light on the cinnamon, but if you're crazy for cinnamon, I think you could easily double or even triple the amount here.
 
 
The Big Blueberry Coffee Cake:
 
2 1/4 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 stick (8 tablespoons) unsalted butter at room temperature or softened
1 1/2 cups sugar
3 eggs at room temperature
1 cup milk
1 teaspoon vanilla
2 cups frozen blueberries

Preheat oven to 350. Grease and flour a 9x13 baking pan.
 
Combine flour, baking powder, salt, and cinnamon in a bowl and set aside. 
 
Cream the butter with the sugar. Beat in each egg. Alternate adding the flour mixture and the milk and vanilla. Add the blueberries one cup at a time and stir or fold into the batter. Pour into the prepared pan and bake 25 - 30 minutes or until a cake tester comes out clean. It should be lightly golden on top. Allow to cool completely before adding sugar drizzle.

Drizzle:

1 cup powdered sugar
1/2 teaspoon vanilla
4-6 tablespoons heavy cream

Place the powdered sugar in a bowl. Add the vanilla. Add 1 tablespoon of heavy cream at a time, whisking as well as you can after each tablespoon. Add only as many tablespoons as you need to reach your desired thickness. Drizzle on the top or pipe on.

    One advantage to frozen blueberries is the wild ones from Maine are available. Yum.
