3-Ingredient Guacamole #Recipe #Giveaway by Maya Corrigan

January is a month for quick, easy recipes after the holiday cooking and eating binge, at least for me. This three-ingredient guacamole takes only three minutes to make if you use ready-made salsa.

The quantity of juice and salsa and the number of servings may vary depending on the size of your avocado, so use the recipe as a starting point. Then taste the dip to decide if you want to add more of any ingredient.

Whenever I serve this guacamole, I get compliments and requests for the recipe. It's almost embarrassing to admit how easy it is.

Double, triple, or quadruple the recipe for a crowd. It's perfect for Superbowl parties.

Ingredients

1 medium Haas avocado
1 tablespoon lime (or lemon) juice
3 tablespoons salsa, as spicy as you like it

Halve the avocado vertically and remove the seed. Instead of peeling the avocado, use a spoon to out scoop the center.

Mash the avocado with a fork. Squirt lime juice on it. Mix in the salsa.

Try the dip. Add more lime juice or salsa to your taste.

Serve the dip with gluten-free tortilla chips.

This recipe appears in The Tell-Tale Tarte, the 4th Five-Ingredient Mystery by Maya Corrigan, featuring cafe manager Val Deniston and her grandfather, the Codger Cook, solving murders in a Chesapeake Bay tourist town.

The book takes place in January, the month when fans of Edgar Allan Poe celebrate the author's birthday at his grave in Baltimore. Actual incidents from Poe's life and present-day mysteries related to him and his works are part of the story.

Edgar Allan Poe’s spirit hovers over an actor famed for his one-man Poe show, an author who riffs on Poe stories, and a Poe look-alike. When café manager Val Deniston serves a French tarte at a book club dinner, the dessert reveals a fraud, embroiling her and her grandfather in a murder investigation.

The search for the actor’s killer takes Val and Granddad to a “House of Usher,” where they spend a harrowing night stranded by an ice storm. Then, in the shadow of Poe’s tomb, they try to prevent another  murder and mete out some POE-etic justice.

  1. Hi Maya,
Thanks for sharing your 3-ingredient guacamole recipe.
I can't wait to try it for movie night with my kiddos.
Hard to pick just one dip, I have lots of favorites.
A taco dip (Not the typical 7 layer dip) my mom made for the holidays & parties, when I was growing up. Now I make it for my kiddos. I will definitely check & see if my library carries the five ingredient mysteries. If they don't, I will place a request that they order them.

  11. Thanks for an easy Guacamole recipe. Easier than the one I've been using. I often use Guacamole as a spread on sandwiches. And sometimes toast. Rarely eat chips type stuff. But love mixing avocado with anything. And sometimes I jazz it up sauerkraut. Which is also good with anything. Have yet to read one of your books. And I am hoping this will be a start. bessdeepotter84 at gmail dot com

    1. Thanks for your comment, Pat. The "Poe Toaster" who left the roses at the grave came every year until 2009, Poe's 200th birthday. I have some fun in the book with who the Poe toaster was and why he stopped coming.

  16. I like this recipe primarily because it is just so simple. I love dips and spreads, in fact a meal of nothing but appetizers is my dream meal. My favorite has to be tzatziki, but guacamole and hummus are vying for favorite status, too. My husband's favorite by far is guacamole. I'm going to try out this recipe on him.
Thanks for the chance to win a book. I've only read the first in this series, but I fell in love with the character of the grandfather. He's a hoot!
