Alice's Mustard Sauce


Some of you know that my mom has moved in with me. These days, most of my cooking and baking caters to her tastes. In spite of my constant baking, I do try to serve healthy meals.

My biggest issue is that she's really not interested in meat. Or tomato sauce. Or pizza. Or anything Mexican or TexMex. Or spicy!

So for dinner, I thought, why fight it? We are trying to eat more vegetables anyway. And I hid ground turkey in last night's dinner. Shh! Don't tell her!

This is a vegetable plate with a little bit of fruit as a garnish. I plopped some Spaetzle in the middle as a carb. I don't know why, but I do feel like a carb balances things when you're eating a lot of veggies. Clearly you can include your favorite vegetables or whatever happens to be in season. There's another upside to this as well. We'll have veggies in the fridge ready to be heated for the next few days! Less cooking and hot stoves in the summertime.

To make it all seem more like a dish rather than a collection of vegetables, our friend Alice whipped up Alice's Mustard Sauce. It's sweet and piquant, and goes a long way in perking up boring veggies. Alice says it can also be used to glaze ham and ham loaf. It lasts in the refrigerator nearly a week because it's based on vinegar.

Alice's Mustard Sauce

1 cup vinegar
1 cup sugar (white or light brown)
1 tablespoon dry mustard
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper

Place all ingredients in a pot and bring to a boil. Simmer to reduce and thicken. Drizzle over vegetables or brush over ham.

    It must be challenging to get enough protein in meals with those limitations.
    Have you read Diet for a Small Planet and Recipes for a Small Planet? (1970's) They offer ways to get proteins without meat.
