Although there are bags of cubed butternut squash in the produce section of most large grocery stores, it is much, much less expensive to do it yourself. Or in my case, have my husband aka sous chef to it. 😉
4 cups chopped peeled butternut squash
4 cups chicken stock
1 cup chopped yellow onion
2 garlic cloves, minced
1 bay leaf
1 teaspoons salt
1 teaspoon dried oregano
1 teaspoon ground fennel seeds
1/2 teaspoon black pepper
1/2 cup uncooked quinoa
Combine chicken, squash, stock, onion, garlic, bay leaf, salt,
oregano, fennel seeds, and pepper in a 5- to 6-quart slow cooker. Cover and
cook on low until chicken is very tender, about 6 hours.
Place chicken on a cutting board. Add quinoa to slow cooker. Cover and cook on low until quinoa is cooked, about 30 minutes. Shred chicken and stir into stew. Discard bay leaf.
Sprinkle evenly with olives
