#Greek Penne and Chicken by @Terry Ambrose





Who doesn’t love pasta? Right? And these days, it seems life gets more and more hectic. I can remember a wall plaque we had when I was a kid, it said, “The hurrieder I go, the behinder I get.” If that matches up with your life, this could be a good recipe to try out. This one is mentioned in the “Killer Christmas Sweater Club,” which is the third Seaside Cove Bed & Breakfast Mystery.  

Greek Penne and Chicken
A light meal with plenty of flavor that’s easy to create! This recipe can easily be made gluten-free simply by using gluten-free pasta.

Prep Time: 20 min
Cook Time: 30 min
Serves: 4

Ingredients
1/2 (16 oz) pkg penne pasta
1 Tbsp Olive Oil
1/4 cup chopped red onion
1 clove garlic, minced
1/2 lb skinless, boneless chicken breast halves (may be cooked ahead of time)
1/2 (14 oz) can artichoke hearts in water
1 tomato, chopped
1/4 cup crumbled feta cheese
1 1/2 tbsp chopped fresh parsley or 1 tsp. Dried
1 tbsp lemon juice
1/2 tsp dried oregano
ground black pepper to taste





Preparation Steps
Cut the chicken into bite-sized pieces.
Chop the onion and tomato. Drain and chop artichoke hearts.
In a large pot with boiling salted water cook penne pasta until al dente.
While the water is boiling, heat a large skillet over medium-high heat. Melt butter and add onion and cook for 2 minutes.
Add chopped chicken. If your chicken is already cooked, heat for about two minutes. If chicken is raw, cook for about 5 to 6 minutes, stirring occasionally until golden brown.
Reduce heat to medium- low. Add artichoke hearts, chopped tomato, feta cheese, parsley, lemon juice, oregano. Stir occasionally.
When pasta is done, drain first, then add to the other ingredients and continue cooking.
Stir until mixture until heated through, about 2 to 3 minutes.
Season with salt and ground black pepper. Serve warm.
Notes
This recipe has become a favorite of ours for those nights when we need a quick-and-easy meal. It becomes even easier if you plan ahead and cook the chicken ahead of time. We usually like to barbecue chicken breasts one night so we can prepare one extra to go in this recipe later in the week.
