Peppery Grilled Cheese #recipe @LucyBurdette

LUCY BURDETTE: I love, love, love grilled cheese, even though I have to stick to lower-sodium cheeses these days. It turns out that most kinds of Swiss cheese fit that bill, including my favorite Jarlsberg. And also that Swiss makes a darned good sandwich. I like adding both fresh green peppers and pickled/candied jalapenos--the result is comfort food with a zip!


Sliced green peppers
Sweet pickled jalapenos, to taste (lots in my case! from the Backyard Food Company)
2 slices good whole grain bread
Butter for frying

Slice the peppers and the cheese. Melt the butter on low-medium heat in a small frying pan. Carefully place the prepared bread into the pan, and layer on the cheese, jalapenos, and peppers, then lay the second slice of bread on top.

Cook the sandwich for a few minutes (covered) until the bottom bread is golden. Carefully flip the sandwich and grill the second side until you see the cheese melting.

  1. Grilled cheese is my favorite comfort food. I just discovered a new cheese at the market the other day -- North Sea Cheese. It is amazing, and I think would be perfect on your grilled cheese sandwich (lots of jalapeños for me too!).

    1. I've never heard of North Sea Cheese--will have to check this out!

  2. Grilled cheese is so good and so adaptable.
    One of my favorites is from a place in Maine--sharp cheddar, thinly sliced onion, and thinly sliced apple. One their homemade oatmeal bread.
