Have you ever been to a rodeo? In Grilling the Subject, the Wild West Extravaganza is coming to Crystal Cove, and Jenna and the gang are excited. They've dressed up the shop. Katie is going to "man" a foodie truck and offer sliders. I have to admit I salivated the whole time I wrote the book.
And now it's time to share some of the recipes I made with you. This one is not included in the book, so get it here!
Yes, you all know that I love quiche. I have made numerous variations over the past few years because of the Cheese Shop mysteries, and I decided that I ought to try out one for the Cookbook Nook series. This was a major hit with my family. My DIL, who nibbles, ate an entire slice in about three minutes! LOL
FYI, don't tell your kids, but this one is good for you. It's packed with zucchini! If you want, you can swap out for any green vegetable.
“Barbecue” Quiche
1 unbaked pastry shell (8 inches)
1 teaspoons chili powder
1/2 teaspoon ground cumin
3/4 cup shredded cheddar cheese
4 eggs, lightly beaten
1 cup half-and-half cream
3/4 cup shredded Monterey Jack cheese
1 cup chopped zucchini
1/4 cup chopped yellow onion
1/2 teaspoon Tabasco sauce
1/2 teaspoon salt
1/2 teaspoon pepper
Salsa and sour cream, if desired
Preheat oven to 400°
Line un-pricked pastry shell with a double thickness of
heavy-duty foil. Bake at 400° for 5 minutes. Remove foil; bake 5 minutes
longer.
Sprinkle chili powder and cumin over shell; sprinkle with cheddar
cheese.
In a large bowl, whisk the eggs, cream, Monterey Jack cheese,
zucchini, onions, salt and pepper. Pour evenly over cheddar cheese in the pie
shell.
Cover edges of quiche loosely with foil; place on a baking
sheet. Set in oven.
Bake at 400° for 35-40 minutes or until a knife or toothpick
inserted near the center comes out clean. Let stand for 10 minutes before
cutting.
Serve with salsa and sour cream, if desired.

ReplyDeleteI do prefer to start at the beginning of a series, especially if the series has a story-line that continues from one book to the next. I don't like to come in the middle if I can avoid it.

DeleteI read as I get. If a series, when I get the latest I read it. Then I got back to the first and read them all through again. As for the quiche? Love them. My daughter not so much. My son yes. But BBQ flavored and turned over like this one? My daughter would eat. She doesn't have to know what in it. I will not be using the Tabasco sauce in the recipe my daughter dislikes it immensely, chili no problem. But have no doubt that my son will douse his liberally with it. Can't wait to try this.
